That's right - lets get it straight... I can get organic fruits and veggies from LOCAL farmers delivered straight to my house each week?!?! I don't even have to get in the car!!

SIGN ME UP!

Yes, I'm excited - as if you can't tell. If you followed along with my CSA (community supported agriculture) posts over the last couple of years, you know how much I love getting fresh, local veggies. Each week I couldn't wait to whip up something new: From fresh pea risotto to fresh salads to, well, just about anything veggie related...seeing how I am a vegetarian!!

Imagine my surprise this morning, when among my new twitter followers I found @milkandhoneyo - a new company in the Upstate that brings organic & local fruits and veggies right to your door. Milk and Honey Organics works on a subscription basis - sign up for a (pretty much) customized offering of fruit, veggies or a mix of both. You can choose a one time basket - which I've opted for just to try out - or a weekly or biweekly basket. The baskets even come in three sizes - perfect for all different family sizes. AND, get this, unlike the CSA, I can tell them what I don't like... that's right no mushrooms will ever come into THIS household! EWWW!

I can't wait to try it out AND to let you know how it goes. I've got high hopes! Can't wait to see how it turns out!

Since we've already enjoyed a great beer at Harpoon on our Vermont tour, now its time for a little sustenance by way of CHEESE.

That's right, you're really not a true Vermonter if you don't pledge allegiance to the cheddar produced in the state. While there are great versions from large commercial cheese makers in the state, the one near and dear to my heart is from right down the road: Crowley Cheese - a small factory with only a few rooms, little fanfare, and lots of hard workers.

Often touted as the oldest continuously running cheese factory in Vermont, or possibly even the U.S., I was lucky enough to grow up enjoying the cheese as a common treat...

While the gift shop is no longer open (and I just can't seem to drive past the building wishing it were open with a HUGE wheel of cheese waiting to be sliced), the people at the factory are still friendly and willing to stop and chat for a few minutes - about cheese or just about anything!

If you're lucky enough to time it right (be sure to check Facebook and Twitter - hey, they are old school cheesemakers but that doesn't mean they don't know the value of technology!), you might even be able to stop in and see the actual cheese making process!

The by-hand cheese making process is a tough one - especially on hot summer days like the one we visited on. See everyone pitching in and bailing the curds by hand?? Racking and stirring is all by hand still too!

Its a job that's been made famous too - for its dirtiness - on Dirty Jobs.

Of course, we couldn't leave without sampling every type of cheese available. But I'm loyal. My favorite is still just the Extra Sharp Crowley Cheese. I know what's going on my Christmas list!

In honor of #IPAday - Beer. Its what makes a vacation.

Ok, well, maybe not QUITE... but close! Since today marks the 1st Annual International IPA Day, its fitting that the first post about our vacation is about Harpoon - right?

A summer trip to Vermont just isn't complete without a visit to Long Trail and Harpoon. After all, as faithful New Englanders we couldn't head back south without a pint or two of the brews we can't find down here.

Boston, has traditionally been a beer city. In fact, the news of their beer fetish traveled cross country by the mid-19th century. Need proof of how much those Bostonians have loved their beer? No worries, its well documented!

That's right, beer was (and is) a daily staple of the the town:

Along with commercial brews, ordinary citizens attempted all sorts of recipes. Some for Lagers, some for Ginger Beer, others that were Molasses-based. Newspapers commonly printed new recipes to try:

So, its not a big surprise that Harpoon, a favorite beer of ours, had its origins in the beer-loving New England city of Boston.

So, you're saying to yourself... that's nice, its a Boston beer tradition. But where's the Vermont tie-in? Well, that comes a while later: Due to the financial problems of Catamount Brewery, Harpoon was able take advantage of a great building in a location in Windsor, VT.

Since Summer 2000, the facility in Vermont has been enjoying success and making its own history.

While we would have loved to do the official tour and hear more about the process of brewing and how Harpoon is made, it wasn't to be. Our timing was off. BUT, that's a good excuse for a return visit - right??

Summer 2011: 5 weeks. 15 States...

Summer 2011 was one for the Flood Family record books:

1.5 weeks in OBX
5 weeks in Vermont
15 States travelled
3 Museums studied
2 Beer Breweries visited
2 Cheese Factories toured
1 Distillery sampled
1 Chocolate Factory for a bit of sweets
1 mountain roller coaster
1 Sugar House to sample maple goodies
Countless restaurants dined in
6,100 miles traveled in automobiles

Yup, that makes me tired.

I can't even begin to describe the restaurant meals. Some good, some bad, some so horrendous that they will be part of Flood Family Memoirs. Some so good that they were topped off by an entire cheesecake :)

We were so lucky to visit friends and family across New England and along the way. Stay tuned to see what this year's travels might inspire ... you never know what might spur a post from me ;)

Oh yea, I bet I missed a bunch of things. And I might cover them someday too!

My Ocracoke Top 10 - Redux.

No matter how much I wish somethings would stay the same... they never do. The kids are growing up faster than I can keep up with, technology is changing every day... and Ocracoke is no exception.

Shortly after My Ocracoke Top 10 post, I received a tweet:

SAY WHAT?!?!?!

Yes, I guess this is "progress" and most likely a great benefit to travelers (me included).

But, I have to admit that just a little part of me is sad. I was really looking forward to my #9 - No Cell Phones in the list of top 10 things I'm looking forward to. Yes, it will be easier for work, parents, family and just about anyone to get a hold of me while we're gone. That has its benefits... Plus, I can tweet and Facebook now (I NEED to make you all jealous, don't I??).

Somehow, we'll adjust. Somehow we'll find a way to put down the phones and convince a 13-yr old not text all day long. I'm not sure how... but we will...

So, here it is.. my new a replacement for my No Cell Phones:

#9 - Pelicans, Dolphins and Crabs! Oh my! There isn't anything more exciting than catching a glimpse of the sea- and shore-life along the Ocracoke coast. Its an unusual break from the hares, squirrels and chipmunks we get to see daily. Dolphins are so magical - getting a glimpse of one swimming by is truly a treat. The Pelicans with their over sized gullets are so entertaining. And, the crabs, well, to be honest.. they just amuse me. I love to watch them scurry along the sand and into their sand holes whenever the slightest danger or shadow passes by... I can't really say how many hours I've spent just watching their perpetual motion...

My Ocracoke Top 10!

If you've followed along with my blog in the past, you know that I have a love for Ocracoke - the ocean, the sand, the island itself. Small, remote and untouched by mass commercialism - Perfection in my mind!

As our vacation quickly approaches, there are so many things I can't wait to experience again. Here are the one's I've picked as my top 10 - although you know I may just have to add a 11-20 post, and a 21-30 post and a - well, you get the idea!!

#1 - Sand, Sun & Surf - Seriously. Ocracoke's main attraction is the beach. It goes on for miles and miles (or Niles and Niles - if you're a fan of Disney's Jungle Cruise). The white sand, shells, and water are so beautiful on the island - that's why it was Dr. Beach's #1 Beach in 2007. BUT, that's not the only reason we love it - we love that we can DRIVE on the beach... which leads me to #2...

#2 - Beach Driving - Yup, Ocracoke is THE reason that we have a Jeep. The very idea of letting air out of the tires, finding a beach access and driving out to the solitude of the sand (without a top or doors!) is the very thing that makes the Jeep so important to us!

#3 - Breakfast - Yes, vacation is a week to splurge... on breakfast! Its a tough decision: Do we go for a daily visit the Ocracoke Coffee Shop? Or perhaps we swing by Dajio for an al fresco meal of Creme Brulee French Toast?

#4 - Ferry rides - No roads to the island. No bridges. No way to hop in your car and just drive onto the island. The only way to reach this secluded bit of paradise is by ferry - or by very small airplane. Of course, due to #2 we choose the ferry.

But, even if the ferry wasn't a necessity, it would be my transportation method of choice. The ferry ride just brings with it a sense of serenity and detachment from every day life that's so vital to vacation...

#5 - Family Time - It seems every year is just a little bit different - maybe our vacation will include hang-gliding, paddle boarding, kayaking, kite-flying, surfing... oh, who knows! The possibilities are really endless.

I'm really looking forward to what this year will bring. I love that we'll be spending time with hubby's parents. Its so great to spend a whole week of downtime chatting and enjoying each other. And with kids, who knows what adventure they'll lead us on next. I'm sure this year will include horseback riding. And, maybe, just another little surprise adventure that mom has planned.... stay tuned for more info on that later...

#6 - Biking around the Island - Last year, I did some running, but this year we're bringing bicycles. Hey, I'm up for something new- so why not. I'm really looking forward to exploring a bit more of the island this year - just by peddling-power, not foot-power!

#7 - Ride the Wind Surf Shop - Our trips to Ocracoke just aren't the same without a daily trip to Ride the Wind. Maybe its time to just browse the surf wear. Or maybe surfing lessons for the kids. Or a paddle board rental... it doesn't matter - we'll be there!!

#8 - Lighthouses - Lighthouses dot the Outer Banks. They've guided sailors through the Graveyard of the seas over centuries. These days, they add a little history AND a little romance to our vacation...

#9 - No Cell Phones - That's right. We'll have 0 bars. ZERO. Thank you AT & T. I'm serious - no sarcasm. I LOVE my iPhone. With a passion. But a week of forced separation = heaven. Yes, I can do it. I'll step away from the phone. I'll talk to people in person. I'll use a regular ole' camera instead of my phone.. and I won't even worry about if the ringer is on. It won't be.

#10 -Hush puppies - Nothing else needs to be said. Just order them. Daily. Seriously.

AHHH... Come on vacation time! Island time can't get here soon enough!

Lands End: Swimsuit Confidence Review

I can't believe I did THAT! Yea, I guess that's not really true. I can believe I did that. I mean, sure, why not? You only live once!

Yes, I'm talking about THE photos. You know which one's I'm talking about.

The BATHING SUIT ones....

And, now, since I've had a chance to try out the suit, I thought I'd give you my review of it.

First, I was lucky enough to have my choice of suits at Lands End. The folks there were so great! I picked out three suits, and the next thing I knew, one was in the mail to me. I anxiously awaited my package - which one would I get??

I couldn't wait for the delivery man to get here - I had to greet him at the door and grab the package. Yes, patience is not my strong suit. I ripped open the box, and saw that my third choice was in the box. After a few seconds of disappointment (hey, I knew my first choice was out-of-stock in my size, but a girl can hope anyways!), I smiled and ran to try it on.

You know, when you're on the beach, wearing those tiny strips of fabric, they have to fit your body just right. Part of having Swimsuit Confidence is feeling good in your skin, but another part is feeling good in your "second skin" as well. Sometimes, you might just get a little lucky and the first suit you try on is it - its perfect: Love at first sight. Most times though, finding just the right piece of clothing (swimsuit or otherwise) takes a little work. It means trying on not just one suit - but maybe 20. Or 50. or 100.

Yes, its a pain. Its not fun. I mean, who really wants to try on 20 suits going... "Nope, that's not it." or even "NO WAY, that's REALLY not it!". Frankly, I can't even tell what size I really even wear in a swimsuit. I always need to grab the size that I *think* I need... plus one size up AND one size down. You just never know what will really fit!

But, its so worth it... to find that perfect suit that makes you feel good. That fits you just right and gives you the confidence to get out there on the beach and play with your kids.

Unfortunately, as soon as I slipped the top on, I realized this wasn't the suit for me. It just didn't fit across my chest quite right. The liner kept pulling up and showing itself. Every time I wiggled just a bit, a little more liner showed... I was sad - the quality and feel of the suit is so nice, I wanted to LOVE it. Its so cute - I just wish it fit my body better. I know that this suit would be perfect for so many women - I wish I was one of them!

So, since I had felt how great the Lands End suit was and knew the potential for THE suit was there, I had to run over to our local Sears this past weekend. I needed (YES- NEEDED) to see if they had the other suits I liked in stock. AND, guess what - they did. I picked out a couple of colors and headed to the dressing room. I LOVED them! They are now on my "wish list" for the next time I feel the urge to shop! Those will be the ones I proudly wear out onto the beach!

Thanks Lands End! While I don't love the suit I have, I am sold on the quality and materials. I might have quickly overlooked these suits in the past, but from now on, they'll be stop #1 when I'm shopping for my next bathing suit!

I Have Swimsuit Confidence!

Can I do this! Yes I can!

Seriously though, after a few minutes of second guessing myself, writing this (and the last couple) posts has actually been fun. Figuring out just how to take some photos in our waterless backyard was an adventure that was filled with laughs AND with quite a few deleted photos...

But, in the end, the photos that are the best are the REAL ones... you know, the ones that portray real life. Like reading a book...

Or hanging out on our new deck...

Or sitting by the fire table, catching a few rays and enjoying a few minutes of quiet...

You know why those are the best? Cause its just a real photo. Of a real woman. Yes, I have a mom's body - after all, I do have two stretchmarks... Um, I mean two children and many more stretch marks. But that's ok. Those stretchmarks, the extra few pounds I can't seem to shed, and those spots I still work hard to re-shape at the gym aren't going to stop me from getting out and enjoying life in my bathing suit. I'm going to be right out there on the beach, swimming, kayaking, paddle-boarding and maybe even surfing. Nothing is going to stop me from loving my beach time! Not even a bathing suit!

Swimsuit Confidence... bring it on! Well, maybe... wait a minute...

Just WHAT did I get myself into??!?!?

Sure, it started innocently enough. Pretty much. An email popped up from some great folks at Lands End: Do I have swimsuit confidence? Would I be willing to post a photo of myself in a bathing suit to show how women of all shapes and sizes are beautiful in their bathing suits?? HECK Yeah my inner woman screamed. I can do this - I'm not ashamed.

So a few minutes later, after browsing the Lands End website and selecting a suit, I sent a note back - I'm CONFIDENT! I can do this! It'll be so much fun!

Then, I stopped... and thought... and thought... UM, WHAT did I just do??? Me, in a bathing suit? For the whole world to see?

So my internal pep talk began. Self, I say: I am not afraid to relax on the beach.. or go surfing, stand-paddle boarding, or kayaking in public. Yes, in public. And I don't mind. That must count for something. Seriously, how bad could putting a picture of me on the web in a bathing suit be...

Yup, its almost that time of year - SUMMER VACATION!

Of course, as soon as school is out, we'll be heading for the beach. That's right, we're packing up the bathing suits and heading to Ocracoke again this year - our idea of paradise!

A momentous day...

Yes, I know... It's been a while. But since you're all my friends, I'll just pick up where we left off... like maybe I was just on vacation (instead of overwhelmed with work, family, friends and more!)...

So, as I was saying .... :)

Motivation for exercising can be tough. Lately I've been hitting that mental road block: Its just not FUN. I want FUN. I WANT FUN! So, after a couple of weeks of laziness, I'm picking back up those exercise habits.

AND, I'm adding some variety. Yup, get this -- I got a Bike! No, not a motorcycle. One I have to pedal. One I have to balance on and exert some effort! Now, this doesn't sound like a big deal really. Lots of people ride bikes. BUT, to be honest, I've always hated it. Maybe its because I grew up in Pine Rock Park - get it? Pine = Woody, Rock = Rocky & Hilly, Park = Well, who knows about one really, but I think it was a Native American for "land that goes uphill both ways". Or, maybe its because I had no one to ride with. Or, maybe its because I just rode a cheapo, generic, bike that I had no clue how to use...

Whichever reason(s) it may have been, I'm turning over a new leaf. Yup, I'm trying cycling. Hey, I've been told variety is the spice of life, so I'm going for it!

After anxiously waiting for the arrival of my new bike, its finally here! And I've gotten to try it out. My hind bones can attest to that! Ya know what, it wasn't so bad. I'm even starting to think where else I can bike to...

Lets cross our fingers! Maybe I'll actually enjoy this !

Before.. and now....

It started as a day. A normal day. One, just like the days before... Nothing unusual, nothing really different. Just one of the 365 days in 2009...

Except, for some reason, I actually woke up. It sunk in... the news the doctor was telling me, the words he said. I had been kidding myself for quite a while. I really wasn't in shape (not any shape at all). Sure, I could function - I was having fun, cooking, eating, and just living day to day. But, along with that, I was tired. My pants didn't fit - in fact, I had a whole shelf of clothes that didn't fit anymore.

Its easy to ignore that. A quick shove to the back of the closet, and Voila. Out of sight, out of mind. Those jeans that fit last year, well lets just hide those under the sweater. You know the sweater: the big, bulky loose sweater that hides the extra few pounds: the FAT sweater.

And so what if my blood test numbers weren't that great: everyone's cholesterol numbers go up with age. Right? Well, that's what I was telling myself... and given America's stats, its almost easy to believe.

There was even proof. Pictures like this:

But, if you asked me, I'd just say.. oh, that's a bad photo. Must be the angle or the shirt. Yeah. That's it.

Was I unhappy? Heck, no. If anything, I'd say the opposite. I was perfectly happy. Content. Maybe even happily lazy. YES- Lazy. Sure, I was a working mom. Sure, I had two kids to keep up with, a full-time job, a husband and a house to take care of. But, I could still be lazy.

It really was all all just an excuse. I was too busy. I was young. I wasn't in that bad of shape. I didn't have "time" to exercise. Sure - I had time to watch a movie at night. Or have a beer and nap in the hammock...

Excuses. Laziness. Denial.

Seriously. Even this picture didn't wake me up.

But, luckily for me, that day did come.The one day when I actually did wake up, when I could see clearly. I saw how UNHEALTHY I had become. How complacent I'd become. Sure, I could still function - work, play and be me. But, it wasn't what I really wanted to BE. And worse, if I kept going that way - ignoring me and my health - I'd surely be hurting my family as well.

So, I started making changes. Some big: I became a vegetarian: meat just wasn't going to fit in with my where I wanted my diet and my health to go. Some small: I decided that organics were the way to go whenever we could - our health would thank us for it (even if our wallet won't- LOL).

Then, I joined the Greer Athletic Club. I quickly fell in love with the Group Centergy (think yoga & pilates mixed and set to music) and Amanda's teaching of it... I struggled to go each and every class - well, except for the 5:45 am one - I'm STILL not that dedicated! And I did- for months I didn't miss a single class.

And started running with a goal: the 2010 Halloween Family 5K at the Magic Kingdom in Disney. Hey, it was over a year away when I started running, surely I could do it. I followed the Chubby Jones podcasts. Three times a week we'd run together - me and Mia. It sucked. But, slowly, it sucked less and less... until, there were days when I just didn't feel quite right if I didn't get out and do something for myself each day...

I did something else simple. I kept a food journal. And, YES, there's an App for that! My choice was Lose It! Really - it showed that there was no magic. I had to work to burn those calories. I had to watch how many I ate. I had to DO the exercise so I could log it.

Fast forward to November 2010: I did lose it,.. with the classes, the running, the vegetarian & organic diet... I lost it.. to the tune of about 60 lbs so far.

And I did run the 5K. And, you know what - WE even had fun doing it. That's right. My family & friends ran it too. That makes me happy - very happy. And proud.

I'm not done yet... to be honest, I won't ever be done... because its taken me a while to realize that health is not a single act. Its not something that can ever be "done" - I'll just keep working at it. Sure, I'm going to stumble, I'll make mistakes, I'll falter (oh yea, I AM going to eat those Christmas cookies AND the Gingerbread Caramel Popcorn). BUT, I'll get back on track because I know what my long term goal is: I want to be healthy for myself and my family. I want to be around, a good long time - I want to be a mom, a wife, and even a grandma someday.

And that makes it clear: exercise and good nutrition are going to be a requirement, not an option... A requirement for every single day - its not going to be something I'll get to when I have "time". I'm going to make time - and I hope my family does too...

Well.. it ALMOST the most Wonderful time of the year! Of course, it takes loads of prep to make it that way. Some are big things: Decorating a house, baking dozens of Christmas cookies. Others are small things: delivering a plate of cookies to a neighbor, picking out a yearly ornament...

A little touch of Magic every day!

For a while now, I've been noticing... that just when I least expect it, out of the blue: POP! Up comes a Disney reference...

AND, yes, I know- I am Disney-obsessed, so you might think I'm making that up OR I'm making it happen. But, I'm not, I SWEAR! It just seems that no matter where we go or what we do, it just seems like I hear or see something Disney related each day. It might be an image in an unexpected place, a reference to Epcot in a Psych episode, a song at a restaurant, but its there if you listen closely.

I'm really not making it up or imaginating it! So in an effort to prove that there is a little (unintentional) Disney in my life every day, I'm going to start making an effort to share the little spots of Magic I find every day.

Here goes the "sightings" for this Labor Day weekend:

Saturday: A low-tech weekend with the kids. Yup, a day spent away from technology just enjoying the family. Today's adventure was a ride in the (topless) jeep up to pick some apples, followed by a leisurely ride home. Along the way, we found a lovely lunch spot by Lake Lure: La Strada. While enjoying pizzas and tiramisu on the outside patio, but what should we hear on the restaurant's radio: Kiss the Girl from the Little Mermaid. That's right, just a little Disney pixie dust sprinkled over day!

Sunday: Another day of not doing much. A little shopping for our upcoming cruise, a visit to the gym and to Best Buy. AND, an evening Dr. Who marathon. We've been watching the new series, and we're up to Season 2, Episode 6. And if you're a Disney nut, like me, listen closely because you'll hear it. Yup, you'll hear The Lion Sleeps Tonight... not quite the same a Timon & Pumba duet. But, its there...

I didn't set out to find those Disney references. They were just AHA! moments, of "Hey - that's Disney!"

Le Cellier Cheddar Cheese Soup - Vegetarian Style!

Ever have those days- when you just SUFFER from Disney withdrawals? Well... this past week has been like that! I'm stuck right between Disney trips. I mean, seriously folks, its been 8 weeks since my last Disney Trip. That's TWO Months! And I have almost a whole more month before I can return.

What do you to alleviate those blues?? Well, I turned to the best thing I could think of: My Cooking with Mickey and the Disney Chefs cookbook! Ok. You know me. You KNEW it had to do with food.

But, it couldn't be just any Disney recipe. It HAD to be a pretty darn famous one: Le Cellier's Cheddar Cheese Soup. And being from New England originally, any reason to scarf down some Cabot Extra Sharp Cheddar is good for me!

Of course, there had to be a few modifications. We had to vegetize this recipe!!

Lets get cooking!

The first thing to do: chop that onion and celery as small as possible. Note to self: next time chop even finer. Much finer! (Hey, I only have sooo much patience when I'm hungry!)

Toss that in the pot with a little butter (light butter ;) ), and saute. Once things are looking good there and the onion and celery are tender- whisk in the flour. Since I eliminated the bacon, I decided to add in just a bit of olive oil at this point too..

Cook for a few more minutes- AKA as long as you can stand to wait when you've been to the gym and are starving. ~~When you've finally given in..~~ After 5 minutes or so, slowly whisk in the broth. Organic veggie broth in our case...

Bring to a boil and, then, simmer. And Stir. And Wait. For 15 LONG minutes (ok, it wasn't really that much torture, but it was getting there!)

Then of course, its time for some creaminess: Milk. Yes, lowfat. And, yes, I know... I'm taking all the fun out of it.

And- guess what. Time to simmer again. At this point it WAS torture. MMMM, the smell! It was already looking pretty good, and I didn't even add the cheddar yet!

Then, at LAST, it was time for a few finishing touches: Worcestershire Sauce (look for a fish-free version!), Tabasco and CHEESE! Oh, and a little beer to finish it off!

The verdict: Well, I liked it.. but I'm the cook. So not so sure my opinion counts! Hubby says: Good, but unless our home is a basement in Disney- it just won't ever be the same! My lovely daughter says she'll wait until the Food & Wine Festival so she can compare (yeah, right thanks KID!!). Son says... yea, nice try mom....

CSA Delivery #11! - Summer Veggies!

Yup, its still incredibly hot here. More triple digits. Only tiny bits of rain... so the result is: Hot weather veggies are doin' fine!

Inspiration really hasn't hit me yet... but more okra means.. more pickled okra! And peppers? I'm thinking stuffed peppers... Swiss Chard.. not so sure on that one yet!

CSA Delivery #10 - um, Okra??!!

Hmmm, well... Okra. Yup, that's in this week's delivery. Never cooked it before. And, as far as I know, the only time I've eaten it was in gumbo... Its good in spicy, hot creole cooking.. but what am I going to do with it???

Ok, I've settled on it. Pickled Okra. Ya know why? Because my dad will eat anything pickled. ANYTHING. So, lets go for it!

I snagged one of those hot peppers you see, the okra... some garlic, onions, dill. Along with some Vinegar... and what do we have...

Now the wait begins.. its going to be at least a week before we can be a test case... I'll have to let you know how that goes!

Oh no. A teenager in the house!

Holy cow! Really? I'm the mom of a teenager? Already?? Yikes. I mean, I know I'm getting old.. but not THIS old!!!

Its hard to believe 13 years have flown by already. So many changes have happened in that time... a baby brother, a move to S.C., new schools, new friends, new jobs, a new house.. yup, the years have been good to us...

And to celebrate those 13 years, my dear daughter decided it was time to decorate her own birthday cake: a ginormous cupcake, with green frosting and zebra stripes... Um, ok. She's an original alright!

A box of fondant, some icing, food coloring... and there we have it: Cupcake Heaven!

Check out the key- that should give you an idea of the scale!

Of course, I may be a bit prejudiced.. but I love it! I think she did a great job!

CSA Delivery #9 - Tomatoes!!

Yup, its that time again... time to catch up on July's CSA deliveries from Limestone Farms!

This week's delivery continues our hot weather veggie theme! Summer has definitely arrived in South Carolina - with temps in the triple digits nearly every day! Swiss Chard, Wax beans, cucumbers, tomatoes! And, during the week we even picked up an additional 10# of tomatoes! Homemade tomato sauce here we come!

And oh yea, PS.... I didn't forget Week #8! I was lucky enough to surprise hubby with a trip to Disney World for our anniversary!

CSA Delivery #7 - Piles o' potatoes!

I can't believe how the time is flying by - we're on week #7 of our veggie deliveries already! Nearly two months have passed since we've started.

And a hot two months they've been! With temperatures hitting the high 90's and nearly 100 every day, the tomatoes are really coming in! But not so much for some of the other veggies!

This week's box includes fingerling potatoes, cucumbers, onions and tomatoes!

I'm sure some salads are in our near future. And tomato sandwiches for my and my daughter. Not quite sure about the potatoes yet - but perhaps we'll have "breakfast for dinner" complete with hash browns. Sounds good to me!

Pagash! or is it Pogosh? or... Pogash? or.... ok, it tastes good anyways!

Seeing that great head of green cabbage in last week's CSA delivery, I knew just what I wanted to do! Pagash!

Ok, I really don't know how to spell it... Google suggests that's the best spelling, so I'm going with it. But, it doesn't really matter how badly I misspell it. Its the taste that counts!

Pagash is incredibly simple, and something that comes from my Slovak roots. Its a dish that my Italian-Hungarian mom has made for years for my Slovak dad. No one can top her perfection of it. A golden brown bread, stuffed inside with sauteed cabbage or onions OR, as my kids prefer, a cheddar cheesy mashed potato. Yup, don't make fun of it until you try it!

The steps really are simple - and since I was pressed for time I made it even simpler: frozen bread dough.

The first order of business is to chop the head of cabbage along with an onion and toss it into the frying pan with a little butter (substitute in our house) and olive oil. Add some salt and pepper. Saute away!

Next up, we'll roll out some bread dough, and place it in a baking pan. Be sure to leave enough dough out to tuck back over for the top!

And into the 350 degree oven for about 20 to 30 minutes... near the end melt a little butter on top for a golden color... that's it!

Ok, I lied.. that's not it... Then you EAT it. And go back for seconds. Maybe thirds. mmmmm.

And when I was bad, I was bad... Dajio on Ocracoke

Well, I was good on Ocracoke - and you've seen the proof. I ran. I exercised. I swam and I even attempted to surf....

But, of course, that's only because I HAD to do that... because when I was bad, I was BAD. With food. Seriously, how can you have a true vacation and not have Food. With a capital F. And since I wanted a real vacation, I jumped in with both hands... and forks...

While most days started with a trip to the Ocracoke Coffee Co. for incredibly good coffee drinks and asiago bagels, occasionally we splurged and tried the coffee cake (yum) or a cinnamon roll.... to get just enough sugar to keep us going until lunch!

BUT, I had to make a break from our regular routine... I had read about a Creme Brulee French Toast at Dajio in the months before our vacation, and I knew I just had to try it. So, on a day that they kids were up early and off to Surf Camp, Josh and I headed over...

The outdoor patio is beautiful, and that's where we chose to have our breakfast (ok, both our breakfasts, but I'll get to that). Frequent island visitors may notice the pelican atop the wall - a tribute to the former Pelican restaurant which preceded Dajio in this location.

Breakfast - Creme Brulee French Toast, Potatoes & Cheese, and a Sweet Potato Biscuit!

And nearly gone...

And, YES, it was that good! The vanilla flavor was incredible and spread throughout the dense french toast. It was perfectly cooked all the way though - which is a huge pet peeve of mine with regular french toast - any gooey, uncooked egg in the middle of a piece of toast is a huge downer for me. Not downfall here! And the sweet potato biscuit! YUM - flaky, light, and just slightly sweet. Definitely worth every butter-laden calorie (its sweet potato though - it MUST be good for me, right??). The only small disappointment were the potatoes... not quite hot, not quite as flavorful as I hoped they'd be. They LOOKED great - a mix of purple and white potatoes blanketed in a cheddar cheese... unfortunately it was a SOUTHERN cheddar.. which means orange, nearly flavorless cheese. Give me Vermont Cheddar any day...by the pound.

However lackluster the potatoes were, the French Toast was worth a revisit! So, on our last day, before heading for the long ride home, we stopped by to let the kids try it out. This time it was an order of three French Toast and one Apple Pancakes. The verdict again: YUM - but hubby says go for the French Toast over the pancakes even though those were great too!

All four of us loved this breakfast - Go try it! Hopefully you will too!

Running on Ocracoke...

Or otherwise known as: Yes, the torture must continue, even on vacation!

I did it! I pretty much surprised myself, but I managed to keep somewhat of a workout routine while on vacation at Ocracoke! Its incredibly surprising, since once I get to the island I don't usually feel like doing much - just relaxing, reading and eating!

But, in addition to a couple of early morning Centergy sessions (a great mix of yoga and pilates - you should check and see if a gym near you has it!), I managed to get in two shorter runs: 2.75 miles and 2.1 miles. I really enjoy the shorter runs - much more than 3 or 4 miles, and my mind starts to wander to other things I could be doing - working, cleaning... anything BUT running!

Here are the two routes I experimented with, captured with iTrail (yikes, no AT & T service on the island still, but happily the app still worked, thank you GPS!)

The first route was the longer of the two, taking me past the lighthouse, around the loop towards Springers Point, down Howard Street (very shelly!) and back out the Ferry Docks - and I loved running past all the boats, including a visiting NOAA one - call me a weather nerd! Wish those boats were part of my every day runs!

Its hard to believe, but we've already been home for a week! Our annual Ocracoke vacation has ended all too soon (again!).

BUT - it was an incredible vacation! Somehow each year just seems to top the last, and leave us wanting more and more time on the island.

I can't wait to tell you all about the incredible sunsets, the fun time had by all on the water, surfing (or, well, in the adult's cases trying to surf!), the food and the family! I even managed to squeeze in a bit of exercise - running AND centergy to work off the incredible Dajio breakfasts! The weather was beautiful and the travels uneventful - just the way I like it!

Stay tuned for some upcoming posts all about the island and the trip over. Maybe I'll even steal a photo or two from hubby's new hobby: kite photography!

CSA Delivery #6 - The Bounty is increasing!

No - you're not crazy! I skipped two CSA delivery posts. BUT, with good reason - I was off gallivanting around the North Carolina beaches. Being pampered by those great chefs rather than cooking myself!

While I was gone two great folks enjoyed my veggies - I had asked the great folks at Limestone Farms to give my share away to whoever asked or looked interested in the CSA. I'm so glad you all enjoyed the veggies, and was thrilled to see the comments you both left on my blog! Thanks for stopping by to let me know you enjoyed them!

So, now, on to this great bunch of veggies! If you're like me at all, going on vacation is great. You get to try great new food places (like Dajio! YUM!!) but, after a bit, you may get just a little tired of eating out... so its nice to come home to a big, fresh box of veggies! That I get to cook up just about anyway I can imagine!

This week's box held cucumbers, corn, zucchini, yellow squash, radish greens, turnips, cabbage, apples and lettuce!

In my crystal (chef's) ball, I can see some great dishes cooking up: pagash, apple pie, corn on the cob and a squash pie. Can't wait to get cooking!

Well, since I'm off enjoying myself, I thought I might bring y'all along for a virtual ride! And to do that, I'm going to be posting photos of what I might be doing now... That's right, its highly likely that I'm enjoying myself in this very spot, right now!

Arrival day at the Outer Banks will find us up by Nags Head, Jockey's Ridge, Bodie Island Lighthouse and Hatteras...

Maybe right at this very moment, we are atop Jockey's Ridge- in awe of the swirling sand, the sweeping view... and ducking our heads against the wind and sand-blasting :)

Ocracoke or Bust!

Yup, that's right! The time is almost here. You know what I mean... the time when the clock seems to slow to half-time.... each second ticking by slower than the last....

That's because I'm a short-timer now! Just a day of work to finish up, and a jeep to pack tonight. Then, its VACATION TIME! Its time to see THIS view again!

And it can't get here too soon!

In some ways, its so hard to believe its already here. My daughter has finished school for the year. My son will done in 4 short hours. They are growing up. Each year, time flies by so much more quickly. The school year is passing in the blink of an eye. Each photograph snapped of the kids shows how fast they are changing. Sigh.

And, in other ways, I can't believe vacation taking SOOOO LONG to get here. I mean, really. We've been looking forward to it for a whole year. 365 days. We've been planning this trip, from the last moments of last years trip! We even reserved our beach house before we checked out last year! And all the preparations. My mother-in-law and I have been emailing back and forth about what to bring. My husband and I have been debating just how much we can cram into the jeep for another trip. And its almost here. This last day is going to take forever! I'm itching to get on the road!

But, we're ready. House-sitter- Check. Dog-sitter: Check. Packing: Check. Confirmation papers printed: Check. Surf Camp reserved: Check. Paddle Board reserved: Check.

Now, there's nothing to do but the waiting! Come on clock! Tick already!

Dinner: Impossible ... Disney style! TONIGHT!

Have you seen these recent photos of the great veggies we're getting from Limestone Farm's CSA? Ever thought about trying a CSA but wasn't sure it was for you? Enjoy eating fresh, in season veggies??

Well then, I've got a deal for you! For the next two weeks - June 5th and June 12th - I'm going to be unable to pick up my CSA share, so the great folks at Limestone Farms have agreed to help me give them away. Free. Yup, seriously free. Not a catch at all! All you have to do is ask!

Disney's California Grill & a CSA delivery combine! Pea Risotto

Don't you just love it when a "Good Plan" (or fate, coincidence, the gods - whatever you'd like to call it) comes together?

As luck would have it, I recently stumbled across a recipe for Pea Risotto from Disney's California Grill restaurant. Now, I LOVE a good risotto. If I had to choose a last meal, risotto would be right up there - along with a really good pizza, tiramisu and really good chocolate (and maybe even Mascarpone Waffles from Kouzzina!).

AND - then to top it off - last week's CSA delivery from Limestone Farms had peas! Perfect, my two favorite things combined: Fresh veggies and Disney food! What more could I ask for?? Well, other than someone to make it FOR me !!

So, off I went - Dinner Time! We would have a couple of substitutions along the way, since I was feeling somewhat lazy.. we'd swap freshly grated Parmesan cheese for the Manchego, 1% for the heavy cream (I KNOW! Boo! But, healthy reasons mandate this!) and a healthier butter substitute.

First step was shelling all the peas. Ok, that took WAY longer than I want to admit. There must be a trick to it. NOTE TO SELF: Google "how to shell peas" before working on the remaining ones!

They were super quick to cook, and into the blender they went!

Once that was set, it was time to make the rice. Risotto really isn't that difficult to make, its just a bit time consuming. But, honestly, it went much quicker than I thought it would - minus the pea shelling!

And, then it was time to throw in the pea puree, some parmesan, milk and pepper! Top it all with a fresh pea pod and sprinkle of cheese... and Voila! DINNER!

And the ultimate test: When called for dinner, Hubby said, "Wow! That actually smells good for something with peas"! I loved it! Son liked it. And the picky girl even ate it - with a comment that it looked mighty funny!

Final Verdict: 3.5 thumbs up (the girl is the only downer here!). I'll be making this again soon!

PS. I skipped the ice bath and straining of the peas. No need to get THAT fancy in this house!

Here's the original Disney recipe for those who'd like to try it at home!

English Pea Risotto

2 cups fresh English peas

1/4 cup sugar

6 1/4 cups vegetable stock, divided

1/4 cup olive oil

1/2 cup diced onion

2 cloves garlic, minced

1 1/4 cups carnaroli or Arborio rice (also called risotto rice)

1/2 cup heavy cream

1/4 cup grated manchego cheese

1 tablespoon butter

1/4 teaspoon coarsely ground black pepper

Coarse salt, to taste

For English pea risotto:

1. Bring a medium saucepan of water to a boil over high heat. Add peas and sugar to water. Cook 2 minutes, then plunge peas into an ice water bath to stop the cooking.

2. Place cooked peas and 1/4 cup of vegetable stock in food processor and puree. Once the mixture is smooth, pour through a fine-mesh sieve into a medium bowl, pressing puree through the sieve with the back of a spoon. Discard solids. Set pea puree aside.

3. Place remaining 6 cups vegetable broth in a medium saucepan over medium-high heat. Bring to a slight boil, then adjust heat to medium to keep at a simmer.

4. Heat oil in a wide-bottomed saucepan over medium heat. Add onion and garlic, and sauté for 3 to 4 minutes, or until onion is translucent. Add rice; sauté for 2 minutes, stirring constantly with a wooden spoon.

5. Slowly ladle 1/2 cup simmering broth into rice, stirring constantly until most of broth is adsorbed. Continue adding broth, 1 ladleful at a time, stirring frequently between additions and waiting until rice looks slightly dry before adding the next ladleful. When most, but not all, of the broth is absorbed, taste the risotto. When risotto is done, it should not be crunchy at all, but still slightly firm. Add remaining broth, if needed, until risotto is al dente.

6. Remove from heat, and add the pea puree, heavy cream, manchego cheese, butter, and pepper. Taste, then add salt to taste (some broths are salty, so the amount of salt you add will vary). Stir to combine.

Would you believe it? Week #3 is here already. We're heading into summer pretty quickly - Memorial Day is here and the kids have just a few days left of school. AND the heat has arrived in SC as well!

Since summer means fresh veggies, lets see what's in this week's box! Broccoli, Lettuce - Romaine & Red Leaf, Onions, Banana Peppers and a few squash. One of those squash is quite the rogue too - it may just be half zucchini and half yellow squash!

But we'll be eating much more than that this week! You see, I've been babysitting a garden recently. And, well, that garden is overflowing!

Its pretty much a "green" week here! Peas, beans, green peppers, banana pepper, a jalepeno pepper, (more) red leaf, basil, dill, green onions, and JUMBO zucchini! There are even a few tiny orange tomatoes in there if you look closely!

Since I can't resist tomatoes fresh from the garden - those are gone already. There is just nothing like a garden grown tomato! I can't wait for some larger ones to ripen- tomato sandwiches on fresh bread are in my very near future!

In the meantime, this week's menu is going to include: Spanish Rice Stuffed Peppers, Honey-Cashew Green Beans, Salads, Pasta with fresh Basil and Parmesan, Squash Au gratin and maybe even an Asian Stirfry with all those peas! Oh yes, and zucchini bread - I'll be baking that ASAP!

Ocracoke: A Sunrise to Sunset Photo Tour

Kayaking Ocracoke and the Outer Banks

In the past few weeks we've touched on more than a few things to do on Ocracoke and the Outer Banks, from Hang Gliding to dining, to ferry rides and climbing lighthouses, to touring deserted islands and hunting hidden treasures from the past... But one we haven't touched on yet is kayaking!

There is something so peaceful and serene about floating on the water in a small boat without an engine - when near-silent paddling is the only noise intruding on your thoughts. Its a time to enjoy the water and the nature you can simply glide to...

Along the Hatteras shores you can find a marsh...

or a small jetty with a lone visitor...

or perhaps some friends enjoying a sand bar surrounded by water...

You'll never know what type of character you might meet out on the water!

And, of course, along the way you'll also be treated to some unique perspectives - ones that you won't get from land, or even zooming by on a motorized boat.

Maybe you'll even be able to see where the BIG boats go!

And were some others may dock...

Although others may have the idea of enjoying the scenery too!

BUT - one of my favorite things about these small sea-going kayaks has to be pulling up to shore and relaxing. Sometimes the best vacation moments are made by taking a few minutes to just enjoy the scenery and to watch what may happen to float by...

CSA Delivery #2: Collards, Collards and More Collards!

Week #2 is here - and we've pretty much devoured all of Week #1's goodies: Romaine salads with Radishes (and hydroponically grown tomatoes from the Greenville Farmer's Market!), Tortilla de Patata with the eggs (and potatoes from the farmer's market too!). Definitely some good meals there!

We've got just one left-over that's stumped me so far: Collards. Yup, combine that with this week's delivery of them...and I'll come up with something! And soon!

So on to this week's box! We've got Spring Mix, Turnips, Radishes, Green Onions and Peas! All favorites. Oh yea, and that green bunch - you know, Collards.

We've already used some of the Spring Mix to top our burgers - veggie or otherwise - this past weekend. The peas, we'll I've been eyeing a recipe for Pea Risotto that might just be in our near future. And turnips - well, I'm thinking mashed? And, of course, the Collards...

Got any great Collard ideas that DON'T involve a Ham Hock? Send em my way, maybe I'll try one out!

Another island that time has left behind... Portsmouth Island

If you've been reading along, you know how much I love the rustic-ness of Ocracoke and the fact that time feels almost suspended when I'm there.

But, just off the shores of Ocracoke lies another small island. And this one, time has truly left behind.

Reachable by boat ferry, Portsmouth Island is virtually uninhabited (um, that is by humans - mosquitos have found a haven here!). While at its hay-day, Portsmouth Island was a bustling community with a general store, homes, church and life-saving station, by the early 1970's it had been completely abandoned as its last residents left for other destinations.

Today, the village is on the National Register of Historic Places and part of the Cape Hatteras National Seashore and can be toured.

We had the adventure of touring Portsmouth Island a number of years ago, and may consider traveling back to show the kids this year...

Before I can get back there though... I'd like to share a photo tour with you - from our first trip.

Off in the distance, the village of Portsmouth stands. The easy walk down the dirt road is obstructed only by mosquitos...

At one time - as with all small villages, the General Store was a hub of activity and a community gathering places. Anything you could need or want was found here. Or, you'd have to head for a very long trip to the mainland!

Another hub of community activity- the Village Church.

And a home...

Throughout the islands of the Outer Banks stand century old trees. Trees molded by the sea winds into beautiful forms...

A view that is also hundreds of years old: From atop the Lifesaving Station of Portsmouth Island. Today, you can stand where men before you watch the treacherous waters for signs of trouble - men who risked their lives and lived in isolation in order to help those in need.

After a fun (read that how you will ;) ), hike through the marshlands.. you'll emerge on Portsmouth's virtually untouched beaches. Not even a footprint in the sand...

Just beautiful wind-swept sand, driftwood, and marsh grass.. And shells - if you love shelling, you must visit THIS beach!

And, at the end of our day, just our marks were left on the sand. The same footprints that that many before had left... that the sea would erase...

Ocracoke... A vacation filled with history, legends AND fun

Yes, I know.. this isn't the first time I've said it... it won't be the last. But, I really am amazed at how much HASN'T changed on the Outer Banks, and Ocracoke in particular!

As former New Englanders, my husband and I have often made the pilgrimage from the mountains of Vermont to the beaches of Ocracoke. We've driven through New York City, New Jersey, through Delaware and finally over/through the Chesapeake Bay Bridge-Tunnel. Each step of the way, slowly relaxing, until we finally reach the Outer Banks.

The drive down the narrow barrier islands - taking in the sights of Kitty Hawk, Jockey's Ridge, and Hatteras leads to a place that's filled with history, charm and fun. Off the beaten path, even in the 21st century, not a whole lot has changed since this article was written (and the photos taken), 38 years ago...

Lighthouses of the Outer Banks - a historical look back

While there are many, many reasons to plan your visit to the Outer Banks - beach, sun, surf, fishing, kayaking, hanggliding... the list goes on and on. But, one thing is always tops on my list - and from the looks of it, many other's lists throughout history: Lighthouses.

We've already taken my tour of the Outer Banks lighthouses - heavy on pictures and my love for them.. but a little light on history. Its full of historical facts, that while written 50 years ago still hold true today: for instance, little Ocracoke Light is still the oldest Lighthouse in use. It may not tower as high as its cousins to the North and South, but it has a proud history all the same!

Dangerous Waters: A Shipwreck on Ocracoke 1899

I've shared with you a few of my finds along Ocracoke and the Outer Banks - remnants of ships, docks, and who-knows-what... So, today, I thought I'd also share a true life tale of sadness, bravery and the dangerous waters.

This is a tale that sadder than some, and brighter than others. While 21 sailors perished, the brave men of the Ocracoke Lifesaving station helped bring nine others to safety.

This is a story of real folks, who died, lived, and fought to save others. Its also a story that has played out along the Outer Banks for centuries... a story of man's wandering spirit, of travel, and of Mother Nature's power.

Reminders of these treacherous travels are still found throughout today's Outer Banks. Lighthouses and lifesaving stations remain to remind us of the danger that lies in these shoals - both then AND now.

The Pirate Blackbeard: The Black Sheep of Ocracoke

Every family has that black sheep - you know how it goes... The saying "There's one in every family"! But, the thing is - those folks are often the ones who bring a smile to your face, who - years later - you might remember with a chuckle...

Well, in Ocracoke's case, that black sheep is pretty darn famous! He's the pirate Blackbeard. And, while today we look back with a smile, grab an eye patch, or a pirate flag when thinking of him, that wasn't always the case.

Blackbeard even attempted to "straighten out" along the more normal path - retired, married, and legal. But, alas, that life just wasn't for him. He just couldn't resist the call of piracy, of danger and reaping the rewards of battle.

But how does this relate to Ocracoke you ask? Well, you see - Blackbeard liked to frequent the island, to find shelter in its waters - unfortunately, however, he would also meet his death in those same waters.

Today, a small area off the sound-side of the Island is known as "Teach's Hole". Legend has it, that in that spot that Blackbeard met his fate - in the form of a pistol AND sword.

For the pirate lovers among us, you can catch a glimpse of area where Blackbeard himself may have roamed the land at Springer's Point, a nature preserve on the Pamlico Sound very near where the pirate perished. If you're brave enough to dare to enter, maybe you'll be rewarded with a glimpse of a headless Blackbeard ghost (just kidding..... ok, maybe not... I'll leave that up to you to find out!).

And, if you're not quite that brave but want to include a little piracy in your life, be sure to check out the exhibits and shop at Ocracoke's very own pirate shop: Teach's Hole. I know we'll be sure to visit (again) and watch a young boy's eyes light up (and pockets empty) as he looks through the shop!

For me, I'll be visiting the Pirate Shop again, and maybe this year we'll get to Springer's Point too... but I'll also be keeping my eyes peeled for a little Pirate Treasure - maybe I'll stumble upon that buried treasure where X no longer marks the spot...

The Ocracoke of then... is how I remember it now...

Each day this week, I'll be featuring a news article - a highlight of Ocracoke's history throughout the years..

You've heard me describe Ocracoke - the small barrier island which holds a dear place in my heart. The place seemingly untouched by much of today's hectic life. Its a place where it seems that time has stood still - well, for as much as it CAN stand still.

And, while I sit & type and marvel about this... I'm not alone, nor anywhere near the first to have these thoughts. Nearly 90 years ago, this news article described Ocracoke much as we would today. There is a touch of legend (AYE, Blackbeard!), a touch of disbelief (of doors without locks!), a touch of history (homes built from the lumber of wrecks!) and a touch of community- which is still a small group of folks who are lucky enough to call Ocracoke home.

CSA Delivery #1: Radishes, Romaine, Collards & Eggs!

CSA Day # 1 was finally here! Although it took a bit of schedule-juggling to get down to the pickup today (Mom-Daughter soccer game was soon after the pickup!), I was really looking forward to heading down to Limestone Farms to pick up my box of veggies!

And, it didn't disappoint! After a few minutes of chatting with both the great folks who run the CSA and another family starting the CSA journey, it was time to head home to unload today's bounty!

Fresh romaine, collards and radishes were supplemented by eggs this week! The South Carolina spring has been non-existent this year - one minute its 50 degrees, the next 90 degrees, so I wasn't too surprised that the cauliflower ( sad face here - I LOVE cauliflower) didn't do so well. Its been a rough year for those cool-weather plants!

And, in case you've never had a fresh egg before, here's a comparison (I wish you could taste the difference!) The Limestone Farms egg is on the right - it's a much darker color & has clearer /firmer whites, and is just plumper! The Egg on the left is a plain ole store bought egg - good, but not great! Of course, the real difference is in the taste test - which the Limestone Farms egg wins without any doubt!

So that's it for Week #1 - stay tuned to see what we do with collards - I'm not even sure yet myself!!

The Graveyard of the Atlantic... The Outer Banks' treacherous waters

Even with the advent of lighthouses, lifesaving stations, and plenty of nautical charts, the shifting shoals of the Outer Banks create a labyrinth that ships must carefully navigate... which was often near impossible before the arrival of modern technology.

While times, for the most part, have changed, there are still remnants of the danger that these shores embody. Today, some pieces of wrecks remain, and can be seen along the sand - depending on how and when the shifting sand choose to show their hidden treasure.

Although I doubt that I've captured any actual wreckage in my photos (be sure to let me know if I have!), we've stumbled across some interesting finds in our journeys - some may be ships related, or perhaps old piers, or simply leftovers from man's battle against mother nature.

Whenever I catch a glimpse of something unexpected, I always let my imagination run just a little bit wild. And hope that maybe I'll find just a bit of Blackbeard's treasure - Hey, a girl can dream can't she!!

Oh veggies, how I've missed you! Our CSA adventures!

Today marks a wonderful day! Its the first veggie pickup of the year from our new CSA: Limestone Farms.

What's a CSA you ask? While I can tell you that its an acronym for Community Supported Agriculture, that doesn't tell you a whole lot! In reality, a CSA is a neat way to support local farms - while ensuring you get a fresh helping of veggies each week. For a fixed price, you purchase a "share" in the farm - basically a delivery of a big box of in-season, freshly grown, and, usually, organic veggies. I'll be picking up our families delivery each week right at the farm - although there are a variety of pickup places and times to suit all sorts of schedules.

I've been a HUGE fan of CSA's for many, many years - ok, dating myself here! BUT, since our move to South Carolina its been the one thing I haven't been able to find. Nearly all the other farms I had found were too far away - I just couldn't commit to driving an hour + each way, each week... so its been store bought veggies for us, with an occasional supplement from Grandpa's garden. Of course I'm happy that this summer, those grocery trips will be only fruit and an occasional item to supplement our box!

And, if there is one thing I really hate at the grocery store - its wandering through the veggie aisle picking out staples like lettuce, potatoes and onions. I'm never happy filling up all those plastic bags! I tend to drift towards the less well-known items - I can't tell you how many times I've been asked at checkout: "Exactly, what is in this bag??". And well, the kids tend to reply with, "Yeah, we know.. she makes us eat that. Instead of candy. Sigh".

That's all changed now - A few weeks ago, we stumbled across Limestone Farms at the Greenville Farmer's Market and the rest is history! We're now looking forward to a summer filled with Basil, Tomatoes, Cucumbers, Pumpkins, Kohlrabi... and tons more other veggies for variety. With some things, I'll be challenged to think about how to cook veggies like Collards (Yankee roots showing through!) or Blue Potatoes. And other items I'll just have to share - I've just never met an Eggplant that I've liked! But, that's ok, we'll enjoy, experiment and share our bounty!

Kites! Kites! and More Kites!

Well, since I left you off at Kitty Hawk Kite's Hang Gliding school last time... I would be remiss if I didn't point out the "kite" part of their name too! And, really, is there a better place to fly a kite than the beach? No pesky trees, telephone lines... or houses! Just plenty of space to get flying!

If you're at the beach, and thinking maybe you'd like to.. well, go fly a kite! Then Kitty Hawk Kites is THE place to go. While there are stores scattered up and down the Outer Banks, and on Ocracoke too, I have a soft-spot in my heart for the store right across from Jockey's Ridge.

This store is just jam-packed with every kind of kite you can imagine - from jellyfish to pirate ships, to parafoils, to stunt kites - you can find it all in one single spot.

Adventure in the Outer Banks Dunes! Relax. Look Ahead.

Since we've been traveling around the Outer Banks to see those beautiful lighthouses, I thought I'd continue the tour with another special place we love to visit - and this one involves ADVENTURE!

The Outer Banks is home to the United States' largest natural sand dune on the east coast: Jockey's Ridge (and no.. that's not Tantoine! And yes, those are people not ants!)...

Combine that with another piece of OBX history: the Wright Brothers' first manned flight.

And, the result is... Adventure in the form of wings!

Last year, both of our kids had the opportunity to try out their wings on Jockey's Ridge. Our chosen day for lessons dawned bright and sunny, but just a tad too windy! See the sand flying off the dune??

After watching the instructor be blown backwards while trying to take off... we decided to come back the following morning and try again!

While the day was overcast, the winds were favorable.. and after a short trek up the ginormous sand dune they were ready for some flights!

Just the kids were able to try out hang gliding last year, but I am supremely jealous! I can't wait to head back to Jockey's Ridge and try it for myself - and I'm dragging hubby this time too! Unfortunately, though, it'll have to wait to a future trip - scheduling conflicts just won't allow it this year :(

Lighthouses of the Outer Banks - Ocracoke, Currituck, Bodie Island, & Hatteras

In case, I haven't made it clear yet... driving to the Outer Banks is a sensory experience. Its a road trip that I just wouldn't want to miss, because you might just miss the beauty of these islands.

Part of the history of these islands is the treacherousness of the ocean, the sand shoals and the weather. To counteract those elements, lighthouses have been built along the islands to guard and warn sailors of what may lie ahead...

Currituck Lighthouse lies in the northernmost portion of the Outer Banks.

Currituck can (and SHOULD) be climbed for spectacular views - both inside the tower AND outside the tower!

To the south of Currituck lies Bodie Island. While this lighthouse is not currently climbable, its definitely worth a stop!

Up next is possibly the most famous of lighthouses - the one that's an instantly recognizable icon of the Outer Banks and the turbulent ocean surrounding the area: Cape Hatteras.

The Hatteras Lighthouse can be climbed (and there's even a night climb this year - check it out at the National Park Service website - I can't wait!) and the view is again absolutely worthwhile. Not only that, but you'll be sure to appreciate elevators after the climb! I bet the keepers of the lighthouse never needed a Stairmaster!

Hopefully after this years trip - I'll be able to share some spectacular night photos with you (unless they are just black!!)!

After our wonderful ferry ride to Ocracoke Island, we'll see the beautiful, smaller, white Ocracoke Lighthouse. While it may be smaller in stature, its no less awe-inspiring!

And while climbing has been off-limits here, you'll occasionally be able to get a glimpse inside...

And while you're on the grounds - be sure to check out the old, gnarly trees which dot the property. They are a sight to see as well!

And, last. but not least, furthest south lies Cape Lookout - but that's a tale of another day: Its the one lighthouse we haven't yet seen up-close and personal... So I'll leave you with the closest we've come...

Ocracoke relaxation A.K.A. "The Ocracoma"

So where was I? Oh yes, we've caught our first glimpse of the island from the ferry and we've started the decompression from Life.

Even though we love the ferry ride, we oh-so-eagerly jump into our Jeep and get ready for the next leg of our voyage... the 14 or 15 mile stretch of Highway 12 ... the ride where you can catch glimpses of the ocean on your left and the sound on your right...

The drive down this narrow barrier island never fails to bring a smile to my face as I'm reminded of the power of nature - the sand dunes, the crashing waves and the calm of the sound. Mother Nature who shaped this small strip of sand with winds, water, waves and, occasionally, her wrath...

Since we're in no hurry, but instead want to enjoy the here and now, we'll often stop at the ferry station and let all the other cars go ahead... We'll just take our time, and enjoy our scenic ride...

Along the way we'll catch glimpses of the Ocracoke Ponies -

And, maybe, we'll be surprised by the beauty of the wild flowers...

And, we'll catch a glimpse of Silver Lake...

And, we'll be delighted by the incredible view from our rental home...

And awed by a glimpse of a sunset that you can just never forget... as we slip into the total relaxation of our "Ocracoma"....

So, I mentioned it before... Ocracoke is secluded. Its a place that just a bit more remote, and a bit more untouched than you may stumble across in your normal, every day travels...

Its a place where a trip to Walmart isn't just a quick hop in the car and off you go... Its a place where if you'd like a Big Mac - well, frankly, you better get planning! Its a place, well, that's just a bit hard to get to!

And of course - that's what makes Ocracoke what it is: the Perfect Stress-relief valve in my world! And, that stress relief starts the minute our Jeep leaves the ground to float on water! Well, yes, it floats - via a ferry that is!

That's because all roads don't lead to this small island in the Outer Banks. If you'd like to visit, you've got two options: Ferry or Airplane. That's it.

As we watch the ferry pull away from the Hatteras Dock (one of three ferry routes which serve Ocracoke), my brain starts letting go of all those everyday worries, of all the job details I've left behind, of all the worries about houses and pets, and ... well you get the idea...

When I feel the wind in my face and smell the salt of the ocean, vacation has finally arrived. Oh yea, let me just say its required, its law, its an absolute mandate - I must stand on the deck of the ferry and watch for my first glimpse of THE Island. And right beside me will be my husband with his hand in mine... for he loves this small strip of sand just as much as I do!

Along the way, we'll be entertained by some "hitchhikers"

And... we may even be more entertained by the folks who think that maybe they'll toss them a cracker or two not realizing: What goes in a bird....Comes out of a bird....

We'll scan the horizon and the waters, looking for those sights we just don't get to see very often:

Soon, (too soon? not soon enough??) we'll catch that first glance of Ocracoke Island...

Ok, so I've talked about the food. Yes, food is first and foremost on my mind most days (Did I tell you that one local restaurant has French Toast Creme Brulee?? Do you know where I'll be soon??). BUT - where would all that food be without THE BEACH!

Yes, that is the draw of Ocracoke Island. In fact, after many years on Dr. Beach's Top Beach List, Ocracoke finally made it to the #1 spot - beating out Hawaii - in 2007. So let me share a few images of our favorite spot...

Yup, that pretty much sums it up - Secluded! The beauty and uniqueness of Ocracoke (and other parts of the Outer Banks) is seclusion. With multiple beach access points, and miles of driveable beach (usually) its an adventure to find your own perfect spot to park and relax for the day. And, depending on the time of year, you may have that spot all to yourself!

One of our favorite spots to relax and unwind, read a book, and have a picnic lunch is at the north end of the island near the ferry docks. Calm waters and a great view really set this spot apart from the rest!

And you never know who you'll find sharing that ocean with you!

Since our beach vacation is rapidly approaching - yes, school will be out in 30 days and we'll be on our way- I've FINALLY started planning and getting ready.

These days, my thoughts are drifting to the ocean breeze and sand between my toes. AHHHH! I can feel my muscles relax just thinking about Ocracoke. And, of course, then my thoughts turn to: Food. Yup, that's right - that's the thing I'm looking forward to the most. A week of dining on an island without a single franchise food establishment. Not a McDonalds, Olive Garden or Red Lobster in sight... or within 50 miles and a ferry ride!

We'll be back to our island favorite: SMacNally's (Facebook or via their website) aka SMX. The best burgers in the world... a Cowboy Burger will make my husband smile every time. Cold beer chilling on ice. Fresh seafood brought in by the boats docked not 10 ft from your table... If that's not culinary heaven, then I don't know what is!

BUT... unfortunately... that's a double-edged sword - dining may just be the least favorite thing I'm looking forward to on the island. You see, its not Disney World - I can't just go into any restaurant and expect to eat... Since I've become a vegetarian, dining has gotten just a bit more complicated in these tiny destinations.

Last year's adventure at Howard's Pub still can make the kids cringe... Mom tried to be her vegetarian self and order a Taco Salad without meat. Yup, that didn't go over well - it started nicely.. but ended up with an argument with the waitress, me eating a plain ole Caesar salad, and having a salad with sour cream and salsa shoved at me after paying the bill.

To say that dining options may be limited, and restaurants not quite accommodating might be an understatement... But I'm going into it with an open mind... and an empty stomach. Maybe I'll be pleasantly surprised this time!

If I can't go to Disney...

Well, honestly... sometimes a vacation to Disney just isn't what the doctor ordered. Yup - there. I said it! Its hard to believe, but yes, sometimes we do like to travel and explore other places.

One HUGE favorite vacation spot of ours is the beach. But not just any beach... it has to be one, very specific beautiful beach on a very special island: Ocracoke Island, North Carolina. The island is scenic, secluded and named as Dr. Beach's #1 beach in the U.S. for 2007 (yes, even beating out Hawaii!).

Ocracoke holds a special place in my heart - its the first vacation spot I ever visited with my husband (pre-husband/wife days!), its the place where I lost my heart to him, and the place he proposed...

Its a place that we can totally unwind. Away from TV, radio, cell phones, and hectic life. It was the place we'd visit without kids: To reconnect and relax together - To have adult time alone without kids, bills or jobs...

These days our Ocracoke vacation has changed just a bit for us. Last year we allowed the kids to join us. Yup, I mean it ... it was hard to do, but we LET them come along. They begged, but we worried. "Would it be the same?" "What would the kids do without tv, video games or cell phones?" "Would they be bored at the beach?" "What would they do at a place that's off the beaten path - a place that no roads lead to- only ferries??"

But... our worries were for nothing. They LOVED the beach as much as we did. They spent hours boogie boarding, paddle boarding, and kayaking. We flew kites. We shelled. And we just enjoyed the sun, sand and surf. Paradise!

Hubby's parents joined us too - so a new house rental was in store since our normal rental wouldn't fit our new group. What would that be like? Giving up our small, two bedroom (twin beds only!) rustic harborside home for a much newer soundfront condo? Well, in all honesty, it was wonderful.

We traded one lovely view...

for another...

And we loved that too!

2010 promises to bring more changes too... we'll exchange the hang gliding lessons for surf camp this year... And we'll welcome my brother-in-law and sister-in-law along on the trip as well...

And I'm sure we'll love those changes as well... Stay tuned for more to come.

5 Stars to Mickey Bars - Day #3 A Final Breakfast

Day #3 - Departure day - was already here. I can't believe how fast time was flying. It seemed like we had all just met for the first time - and it was already time to say goodbye! No fair!

Our last "official" meal for 5 Stars to Mickey Bars would be at Cat Cora's Kouzzina. While this was a "repeat" restaurant for me, I was glad to be going back. The breakfast options here are unique and yummy. Our table sampled quite a few great options - but my waffles topped with Mascarpone where incredible. My favorite dish of the whole trip!

Waffles & Mascarpone, Sweet Potato & Turkey Hash, Orange-Blueberry-Granola Pancakes

Of course, with all of us foodies there, this was bound to happen. Poor Arthur! BUT, we did all learn to ask if it was ok to eat before digging into our meals!

With breakfast over, it was so hard to say goodbye - but we had to! We had pushed it so late, that we only had 1/2 hour to finish packing up and check out of our rooms!

Amy & I took the opportunity, to shop at Downtown Disney, checking out new stores we hadn't seen before: D-Street, Little Miss Matched, and Trend-D for Amy. I love these new shopping options! Each is unique and brings something special to shopping!

Souvenirs were bought.. and guess what - we were... gasp!... hungry again. We chose to end our trip as we started it - at Big River Grille. Salads and veggie quesadillas fueled us up for the long trips home! Boo!

Luckily, Amy and I were on the same flight to Atlanta - so we were able to postpone the hugs and goodbyes until then. And even more lucky (for me), she lives close enough that I'm sure I'll get to see her again soon!

5 Stars to Mickey Bars - Day #2 Dinner and a show! And a show! And another show!

Night #2 was a night made for fun and fireworks!

For our dinner experience tonight, we headed off to the Hoop Dee Doo Musical Revue at Ft. Wilderness. This is truly one dinner show that will leave you smiling! And, in our case, even crying!

While the typical fare here consists of salad, fried chicken, ribs, pork & beans, and mashed potatoes - I was planning on eating off menu tonight! I keep saying it - Disney restaurants are the easiest place for me to eat as a vegetarian - and the Hoop Dee Doo chefs were no exception! Last winter, I tried the grilled vegetable plate (that was spectacular), so I was torn... do I get the same again or try the pasta... Since I like trying new things, I went with the pasta. While it didn't disappoint- hot, filling, and plentiful... I think I'd go with the grilled veggies next time. Somehow those grilled veggies just seem more western to me!

Of course, A.j., being the food blogger she is, HAD to get a picture of my meal too!

Since the Hoop Dee Doo is all about fun and merriment - they like to involve the audience as well. A table nearby was celebrating a marriage anniversary - 62 years of marriage. When they got up to dance together, more than one of us at the table had to dry our eyes. Congratulations to that special couple - still in love after all those years!

Of course, some audience participation is for rip-roaring fun only! And that was the case as Laura was pulled up on stage to "help out". Well, of course, Laura was more than happy to oblige AND oblige well! She was a sassy, fun, and beautiful Can Can dancer!

I think she may have a new calling in life! She really hammed it up!

With dinner over, we were off again. This time, back to Epcot for a little free time (Chef Druck's first time on Test Track!), and then an Illuminations Dessert Party...

I have to say, I am officially spoiled now. The Illuminations Dessert Party location in the United Kingdom is just spectacular. Along with that view, a full spread of desserts (eclairs!), coffee service and cordials all in a private area really create an over-the-top experience! What a way to end a theme park day!

Joining us during the party was Disney Mom Suzannah. Yeay! Since she lives close by, she came over to say hi to Amy, A.j. and I! It was so great to see her again! All of us Disney Mom folks posed for a picture.. unfortunately it was dark... so its not a great one!

And, since we all wanted to chat, and hang out, and chat.. and, um, chat... We decided that Jellyrolls would be in order. So, out the International Gateway we went, for a great stroll along the boardwalk to the club.

It was my first time at Jellyrolls and seeing the Dueling Pianos. I enjoyed it! It was a nice way to end the night with old friends and new...

But, little did I know... the night wasn't quite over. Those magical folks at Disney had done it again: A midnight milk & cookie snack AND a dessert cookbook. Thank you!!

With tummies full from Cape May, we were off to the Magic Kingdom! With a mission!

But, of course, before we could start, we had to pose for a photo in front of Cinderella's Castle! In order, here are Angela, me, AJ, Marian & Amy!

5 Stars to Mickey Bars - Day #2 Breakfast

Day #2 arrived with much anticipation on my part - since I would get to try Cape May at the Beach Club resort for the first time. Yes, believe it or not, there are still places and events I haven't gotten to try at Walt Disney World!

Since I was up early, I decided to try out something else new too: The Boardwalk Bakery. While I resigned myself to only an early morning latte (had to save my stomach room!!), I did drool over all of the treats that were available there. With a line out the door, I know the treats MUST be good!

Bakery goods - danish, croissants, and more! (iPhone again... boo on quality)

While sitting outside on the Boardwalk, enjoying the early morning view, Disney Mom Amy joined me. We both loved the atmosphere and seeing families jogging together before their park day started!

And then, we were off to Cape May! The food and ambiance didn't disappoint! Watching kids dancing with Goofy ALWAYS brings a smile to my face. Its just not possible for me not to enjoy myself at a character breakfast!

Here are Disney Cast Member Rick and Anne from the Food Magazine! And y'all know the guy in the middle!

Food was in abundance, and I enjoyed trying the Veggie Breakfast Pizza, Mickey waffles, fruit... AND the French Toast Bread Pudding. Its also illegal for me to go to Disney and not have a chocolate croissant - so I indulged here!

After we'd eaten our fill and taken more pictures than we could count... we were off for a tour of the Beach Club Villas. Why tour the villas on a food trip? Well, gasp, some folks actually don't like to eat out on vacation! They LIKE to cook and prepare meals at their resort!

Touring the villas was fun - they are beautiful and spacious! And the kitchen is fully equipped. Definitely an option if dietary problems force you to cook, or if you like to cook while on vacation. You can even have your groceries pre-ordered and delivered to the room! Now that's Disney service!

After this short tour... we were off for some free time - and a mission to complete! More coming up on that soon!

5 Stars to Mickey Bars - Day #1 Dinner!

Flying Fish. Yum. Wow - again. Apparently that's a reoccurring theme for me! WOW and YUM.

Since we were splitting up for dinner tonight, we said our goodbyes to the Attic and strolled off for the super short walk over to Flying Fish. Our wonderful group consisted of A.j. (THE @disneyfoodblog), Jenny from Playground Magazine (@playmag), Maria Bailey (@momtalkradio), Laura Spencer (THE Disney Moms ring-leader and social media guru - @lauraspencerone), Kelby (@typeamom), Amy (@resourcefulmom)... and me (go figure!). I was a pretty lucky lady with these dinner companions!

And, being foodies, we couldn't wait to start our meal with some great appetizers - salads, cheese plates, lobster salad, kalamari, crab cake... you name it - we got it!

After appetizers it was time to order dinner! And what an ordering adventure it was - we were the DIFFICULT table - a vegan with a nut allergy, a vegetarian, a chick pea allergy (yup, you know who you are!), and a couple of seafood non-lovers! As always, a Disney chef came to visit in order to ensure we were all happy! (Caution: bad iphone picture to come!) Look - he's even still smiling at us! Amazing! I wouldn't have been smiling!!

As usual, I put my trust in the Disney Chefs - just requesting whatever veggie meal they could come up with... And, as always, I wasn't disappointed! The Pea Risotto in my Flying Fish-stlye Bento Box was incredible - I even made A.j. take a taste!!

Could I fit more in? Of course I could - it was research! So, after a brief interlude of a Latte and incredible mini-biscotti (I'll take that recipe, PLEASE!!)...it was dessert time! And, Disney nuts, there was no hint of Nescafe in this cup! Woot!

The Berry Cobbler was a popular choice, as well as the house sorbets (for the Vegan!). But, my love is chocolate - so I went with the Flourless Chocolate Torte. MMMM. And, its accompanying Riesling cube was something we all just had to try - me, A.j. and Jenny. It was too unique not to try it out (its the clear cube). The manager also came over and treated us to a glass of incredible Moscato. YUMMMM.

At this point, Chef Tim came over to check on us. I had to point out that I had a Hidden Mickey in my cookie! Now that's Disney Service.

Chef Tim was even sweet enough to show A.j. and I the Flying Fish Hidden Mickey! Of course, he also told us of a mystery Hidden Mickey in the sweet shop sign right next door - he's stared at it for hours and can't find it! If you manage to find it - stop by and tell him! A.j. and I tried unsuccessfully and Boardwalk rumor is that it may not exist any more!

Sadly, at 10:30 pm, our 3.5 hour dinner was over. Boy, did we like to talk and eat!

To walk off the calories (and since were were in DISNEY), A.j. and I decided to hit Extra Magic Hours at Epcot. We did a full loop of the park (calories burned!) and hit Spaceship Earth & Living with the Land before calling it a night at 12:30am!.

Thinking I'd just drop off into bed - I was wrong! Waiting for me in my room where a few surprises I just had to check out!

Whew! After all that... it was time for a quick call home to hear my husband's voice before I drifted off to my Magical Dreams....

5 Stars to Mickey Bars - Day #1 Arrival

WOW. Yup. That's got to be the best word to describe the 5 Stars to Mickey Bars event this past weekend. The food, the fun, AND, the people - just WOW. I'm not really sure there is a better word to describe it all!

Yes, the food was incredible, but for me, the highlight of the trip was People! The event was such an intimate gathering of incredible, smart, funny men and women that I'm not sure how they chose me to go too! Not only did I get to see some of my favorite Disney Folks: Amy R., Laura S., and Leanne J (all Moms Panel folks in one way or another!), but I also met some incredible food & lifestyle folks as well.

I was even lucky enough to ride the Magical Express, and chat (of course) with Vanessa on the way to the Boardwalk. She's a super talented, fun loving, French foodie that can be found at Chefdruck Musings and @chefdruck on twitter. Here she is grabbing a little "Mickey" time at the outdoor porch of the Attic at the Boardwalk Inn.

Oh, so speaking of the Attic! What a wonderful little reception and party area. Tucked away above the Jellyrolls side of the Boardwalk, this area offers incredible views from inside AND outside areas. Proof is above!

While there, we had a nice little spread of delicacies and an opportunity to meet some of the top Disney food folks! AND, of course, the big Cheese himself!

I apologize for that picture - I had the camera settings all wrong and didn't realize it. And yes, my husband is probably going.. yup, I knew it, right now. That's why he's the photographer and not me!!

Of course, no matter how many times I see Mickey and Minnie, I just can't resist getting a picture or two!

Of course, the time here was all too short, but I was so glad to have met the rest of the group - well NEARLY all of the group. Unfortunately, Jody (@iatraveler) would have a reoccurring nightmare of airline travel this trip - and hadn't yet arrived at WDW!

Since we were a pretty large group, we split up to try a few of the spectacular dining options at WDW: Flying Fish, Todd English's Blue Zoo, and Bistro de Paris. All fine choices, but I have to admit that I LOVED the Flying Fish and am so glad I had the opportunity to check it out! That's up in the next report...

The bags are packed, the salon has been visited, and I even squeezed in one last trip to the mall. So, that must mean that I've ready for the 5 Stars to Mickey Bars Disney Media event !!

And, since food has been so much on my mind lately I did a little digging at www.newsinhistory.com. I stumbled across this gem of an article about a wonderful Disney chef. It seems that he may have been a bit off - I'm not quite ready to give up my "concern over nutrtion" ... he did a great job of predicting hormone-free food and comfort foods. Yum!

And while I never had the opportunity to dine on his culinary treats (that I know of)... I may have sampled a treat or two of his creation at Red Lobster... where he has continued his culinary career.

As I'm dining all over Epcot - AND the World - this weekend, I bet I'll get to sample the cuisine of some other future culinary leaders! I can't wait!

Well, by now you've read all about my up-coming culinary voyage to the 5 Stars to Mickey Bars event happening at Walt Disney World... but what you may not realize is that Saturday also represents another important food milestone in my life. Its my

1 Year Veggieversary

Yup, on Saturday April 24th 2010, I'll be celebrating one year of meatless dining. And to be honest - I think I may have surprised even myself with that milestone!

Now, I have nothing against meat - in fact, since I'm still a newbie at this (at least I consider myself one!)... I may even occasionally drool when the neighbors are grilling up burgers and I catch a whiff...

You see, I decided to forgo meat for health reasons - not moral, ethical or lack-of-yumminess reasons.

And its working, vegetarianism has made it easier on me to choose healthy meals and keep making those healthy food choices. Gone are nearly all of the high-fat dishes. Gone is the red meat.

And, although its not meat, gone is the half-and-half in my coffee. Its gone becauce once I started looking and evaluating with an eye towards "Why do I want to eat this? What is good about it?", it became pitifully apparent that so much pre-packaged, pre-prepared convenience food is just no good.

Yup, that's an obvious conclusion. One I should have seen coming... but when life gets busy, when you need to balance jobs, schools, sports and just about everything else life throws at you - its something that's so EASY to forget.

BUT, giving up meat meant I had to read the labels. I had to look a little closer at what was actually in that food... And, some of it, I can't pronounce. I can't even imagine what some of those compounds with 28 letters, 3 hyphens and 2 numbers are for - or why anyone would think its acceptable to put that in my food.

So, now I don't buy anything without knowing whats in it. I buy organic whenever I there is an option. I even can my own foods now... Sure, I'm not perfect - sometimes I can't walk past the bowl of Doritos at a party... but, that's the rarity now, not the norm.

And, it all started with a single act - thinking about how I could give up meat.

As most of you know, I've had the great, incredible, magical luck to have been selected to the 2010 Disney World Moms Panel. Of course you know - 'cause I just refuse to shut up about it!

Well, folks, the cosmos have magically aligned again! Fellow panelist Amy and I will be attending the 5 Stars to Mickey Bars cuisine and lifestyle event being held at Walt Disney World from April 23rd to 25th! Can you think of a better match? Me, Disney and Food. Sounds like the perfect trifecta to me!

"What is it exactly?" you ask?? Well, those magic-makers at Disney always like to add a bit of pixie dust to each event by keeping some details a surprise, so I don't everything! But the essence of the trip is a showcase of the staggering breadth of dining experiences at Walt Disney World. There are options for every palette, budget and age range!

Preliminary details show that we'll be dining with THE Characters at Cape May at the Beach Club, enjoying an truly immersive dinner experience at the Hoop Dee Doo Musical Revue, and breakfast at Disney World's newest restaurant: Iron Chef Cat Cora's Kouzzina. If that's not enough to make us drool, we're also given the tantalizing teaser of dinner "around the Boardwalk and Epcot's World Showcase" on our arrival night. Could that possibly be dinner, courses, meals at MORE than one restaurant in a single night? What will be in store for us???

AND Darn!! I'm hungry again... Greek omelet anyone??

Eons ago... there was a man named "Slim". Ok, so that wasn't his real name, but that's the name I knew him by... well by that and Galump.

You see, Galump owned a restaurant. And not just any restaurant, but THE ONLY restaurant I remember from my childhood days. And that's because all others paled in comparison. That restaurant was the 2 X 4 restaurant in Mount Holly, Vermont.

Mount Holly was, for many years, my second home. The year I was born, my parents started building a home there. Each weekend (that year and for the next 15 years or so...), my dad would come from work on a Friday and we'd pile into the family vehicle. Off we'd go on the 3.5 hour trek north.

If it was a good night, we'd arrive just in time to visit Galump before closing time. We'd stuff ourselves on incredible Italian food under a rustic roof covered with thousands of gift bows. Now, I have no clue what all those gifts might have contained or what joy they brought, but their bows were immortilized above happy diner's heads...

For all of the incredible Italian food we consumed there.... there was one item that we had to have every single visit. No matter what. Non-Negotiable: Galumpia Salad Dressing. We bought it by the gallon - in fact, if you didn't keep a close eye on my sister, she'd drink it right from the gallon!

Parmesan. Vinegar. Olive Oil. Cracked Black Pepper. Heaven in a miniaturized gallon jug. With, as Galump proclaimed proudly "Heartburn Added".

Sadly, we lost him this year. But I'll always remember the friendship he shared with us. And the love of food that he instilled in me. I don't know of any better tribute to him than this: My son has discovered a passion for Galumpia Dressing.

Sure, its not quite the same as Galump's own hand making the dressing and adding the heartburn. But, just one taste brings memories flooding back. And now, my son will have those same memories - in fact, this year, the Easter Bunny delivered three bottles for his Easter Basket. My son skipped the candy, the sweets, the chocolate bunnies... and instead ran to open the dressing... Seriously! Its that good.

"It is, quite simply, a fabulous salad dressing. Probably the only product we have carried non-stop since we opened in 1992, because we love it so much! Beyond the incredibly ugly packaging lies a parmesan-enhanced vinaigrette that makes you want to eat salad and vegetable sticks every day. "

I wrote these words a few years ago when our first sign went missing, before Old Man Galumpia (Mario DiGregorio) retired from the salad dressing buisiness due to poor eyesight and severe arthritis. The original Galumpia used to be hand delivered by Mario and was made in those squat plastic opaque quart jugs that you might see apple cider or orange juice in-honestly, it was the most bizarre but most beloved item we have sold here at WFM.

We were without his magic elixer for almost two years, during which time we fielded almost weekly questions as to its availability. Then Joe Vulo bought the recipe and started producing Galumpia once again (Our Hero!) Is it exactly the same? No, of course not. For one thing, the label is fancier, and it's bottled in glass. It no longer looks like it was produced in somebody's backyard still by the light of the moon. It's a little less sharp (Mario used to boast "Heartburn IS added" to his recipe). But by God, it's close enough for me. I think it's great, and I'm thrilled to be able to eat it every day once again."

If your mouth is drooling now order yourself a bottle and check it out. It won't disappoint you! Happy Heartburn!

If Mickey only knew...

Oh yea, cartoons... something that seems so simple, but at the same time... something so complex. They are often the first introduction to television for us. Many of my childhood memories are of animation... from Disney films to Tom 'n' Jerry - I was hooked.

Even though that was long, long ago... in a galaxy (or state...) far, far away... not a whole lot has really changed. Today's younger generations are largely the same - albeit the characters and technology have changed a bit...

But at one time, animation's future was doubtful. At one time, folks thought that maybe live-action tv shows would force animation into oblivion. That there could be no place in the movie world for these gems....

Far from fading away (even up against 9 gazillion satellite & cable channels and action adventure blockbusters), I think a strong argument can be made that animation has grown stronger. Today there are short kids cartoons, adult only cartoons, feature-length computer generated animated films, and, now, a surge of 3-D animated films. Sure, the technology has changed - but that's true of everyday life as well. I mean, seriously, I can now be text messaged on my mobile phone when the house door is unlocked! So, of course the animation world has changed... sort of...

Because even if the tools of the trade are more advanced and next-gen... the result is really the same: a child's laugh, a few tears of sadness or joy, and an escape from a stressful, busy life...

The Circle of Life...

You know that phrase - you've heard it before: "The Circle of Life". Sure it has to do with life cycles and the interdependence of all creatures of the world. But, for me, its much more than that. Its every day life. Its cause-and-effect. Its balance.

Its becoming aware of your surroundings, your body, your impact. And, sometimes, that realization has an unusual impetus.

Strangely enough, mine was a race. Yup, it started innocently enough. I knew I needed to shape up. I knew I needed to lose some weight. So, a 5K race seemed like a good idea. And pair that with Disney World, and well, that was all the encouragement I needed!

But, for some strange reason, it didn't stop there. The closer I get to my physical goal, the more I see the impact that small changes can make. Sure, a diet change and an exercise routine makes a difference in my health. BUT, its also a chain reaction.

Those diet changes (ok, sometimes enforced on the family since I'm the cook!) have a side effect on my family. And, when the kids see me out there making an effort to exercise, maybe they're spurred on to try a new sport or to realize that soccer conditioning really isn't that bad. Maybe it means that my son will choose a healthier lunch at school - small changes like giving up a hot dog and having a yogurt once a week is great.

Change starts small and grows big. And those changes snowball - we don't live in a vacuum. It is the Circle of Life - a web.

So, with that in mind, my 5K goal has grown. Now its not just me. Its my husband. Its my daughter. Its my son. We're going to be active (MORE active). We're going to do it as a family. We're going to encourage each other. We're going to suffer with each other (hey, who says running is fun? Really? I'm not there yet. Maybe someday!).

And you know what? It'll be good for all of us. And I think Walt would agree. Even more than 45 years ago, he knew that.

And I think Walt would be proud of us. Exercise, activity, and family are just a few of the things that those changes are encouraging in our daily lives.

Who knows- maybe it won't stop there. Maybe the changes we make in our health will encourage us to make better choices for the environment. Maybe the changes will encourage us to make better choices for our community... Who knows where the Circle of Life will stop - or if it will.

Chef Irvine was a ton of fun - he even noticed us looking at him and approached US! Talk about making us feel like rock stars! (OK, I am apparently a rock star who needs to be watched carefully - check out those guards!)

We enjoyed "checking in" on the progress of our dinner throughout the day at the cooking tent set up at the center of Epcot. We knew we were in for an incredible dinner - one with at least one vegetarian dish just for me!

How can I explain it? That "Disney Touch" - that extra special, welcoming, overwhelming cheer - that overcomes you when you step foot in Walt Disney World? If you've ever had the great fortune to visit WDW, you know what I mean. The service, the happiness, the helpfulness... The WOW factor just doesn't stop. If you haven't had the chance to experience it yet, I hope your turn is right around the corner!

This past week I had the great fortune to attend the first Disney Social Media Moms Conference. A conference... almost like work, right? But, of course, given the venue I shouldn't have been the least bit surprised at the incredible information, speakers and entertainment we experienced. When Disney decides to do something, they do it right AND over-the-top. (More details on the conference to come...)

That "Disney Touch" is a concept long rooted in the Walt Disney Company. In fact, it originated with Walt himself. A man so accomplished, so revered, yet a man who cherished a smile above all else.

Such a great goal - to bring a smile to a child's face. To any face. That's my goal, you see, when I'm at Walt Disney World. I want to bring a little extra touch of happiness to someone's trip. Maybe its a surprise for my own child - a white chocolate Mickey Mouse snuck into the room when no one was looking. Maybe its a surprise for an adult - giving my Disney Blog pin to a fellow conference attendee who had lost hers... AND, maybe, sometimes, I can return the favor of all the wonderful memories and experiences our family has had at WDW by bringing a smile to a Cast Member's face. Sometimes its just a kind word, other times its a nice long chat with a member of security or someone working at the lounge...

How it happens doesn't matter - What matters is that Walt has rubbed off on me. He, and his imagination, have spurred me on to try harder and be better, even at vacation time.

I'm back. Yup. I mean it too!

Moms Panel training report - Day 2 Part 2

And the finish of Day #2...

We didn't have too much time to dwell on the sentimental though -- The Moms, Dads & all were off to see the Move it, Shake it, Celebrate!! Parade. Tagging along with us were those wonderful Camera folks - wow, its a surreal experience to have a video camera aimed at ME while in the Magic Kingdom. A Rock Star moment to be sure!

Since we're such a twitter-prolific bunch, video and photos of us Moms dancing in with Donald Duck and congo'ing through Main Street soon hit the web. Within just few minutes, I had a txt from home: It was the kids via Dad. Requesting that Mom no longer dances in public!

Oh well, I'm a mom. Its my JOB to embarrass them!

With the parade over, we had a few hours to ourselves - So off to ride the new Space Mountain! BUT, no, it wasn't meant to be. Space was being cranky, and had a mechanical "time out". So, Buzz it was!

Since we had a few hours to kill, a few of us were off to Downtown Disney! Shopping! Yes! Here is a picture of fellow South Kakilakian Terry, myself and Kaylene at the Contemporary Bus Area…

All too soon, just a lunch and a Christmas ornament later, we had to head back and get ready for our dining experience for the evening: The Napa Room at the California Grill!

The Napa Room was spectacular. The company was incredible. The view, of course was one-of-a-kind. A big thank you to Disney Mom Marc for capturing a photo of me & the beautiful castle.

The food - especially MY food was delicious! You see, if you missed it before, I am a vegetarian. And BOY did I get special treatment here. In fact, I think a few of my fellow Moms may claim they are too, the next time they get to eat here!

Here is the highlight of my meal, that made everyone at my table Jealous. Yes, Jealous - with a capital J!

After a lovely dinner, which started with a Champagne toast, we were all treated to a Bananas Foster Creme Brulee. Yes. Yum. Yes, I need to burn those calories off still!

Again, everything was over too soon… our night was coming to an end… After Wishes, it was time to say goodnight and head back to the room. What a lovely view along the way though…

Disney World Moms, Training Trip - Day 2 Pt. 1

Ok, so - I think I remember where I left off ! Since I had only gotten as far as Day 1 before The Holidays took over!

Day 2

The next morning was an early wake up call. With alarms (yes, plural - just in case one didn't wake me up, I had 3 set!) buzzing at 4:30, it was time to get up and going for our busy day. This would be the day many (all) of us would be dreading - video shoot day! And a rainy, foggy, gray day it would be!

Now, those previous panelists on the Moms Panel told us not to worry, don't stress - but hey, they are pro's by now! Us newbies just wouldn't listen - it was heavy duty Stress time!

So, in reality, I was up before the alarms… and raring to go! Unfortunately it was a lonely morning down at the Contemporary Grounds - waiting for my fellow panelists AND the coffee shop to show some signs of life!

Soon though, we were all assembled and off in buses to try one of WDW's newest restaurant: Kouzzina. Now, I have to say that this was high on my list of new things to try - I am a big Food Network and Iron Chef fan, and I was anxious to try out Cat Cora's new spot!

The breakfast didn't disappoint! We had choices of a greek-style omelet with tomatoes, spinach and feta, pancakes with granola and orange incorporated right in the batter, or a tamer All-American feast of eggs, bacon/sausage and toast. Since I was still full from dinner and desserts at the Prop Shop, I ate a bit lighter, but have to say that I loved the assorted pastries on the table. Yup, give me the option to pick something battered up with cinnamon and sugar first thing in the morning and I'll cave. Yup, I'm not so strong before coffee!

All too soon, we were headed back to the Contemporary - the rain had put a crimp in our plans and it was time for Plan B: Filming at the California Grill.

Luckily for us, we had some professionals to help us. Two women armed with an enviable array of cosmetics, flat irons, and hair products! YES!

After a nerve wracking hour or so (was it really that quick ?!??!) all of our videos were done. Yes, tears and sweat (you know who you are!!) were shed, BUT it was over. Now we could really enjoy ourselves!

And how do you create a special experience for 20+ Disney Geeks? Well, you entice them with a tour of the Utilidors of course! What a wonderful reward for facing those evil cameras!

As always, no cameras were allowed behind-the-scenes, but let me just say that it lived up to my expectations. Our guide was wonderful and kept us all entertained. We laughed, we smiled… and we cried… yup. I did. Now, I'm not normally a crier, but when she thanked each and everyone of us for helping to pass on the Disney tradition to families everywhere… I shed a tear or two… And I wasn't the only one!

To mark this special occasion, we were even given a special service star - a special retired Cast Member pin for going above, and beyond, the call of duty. I will treasure this for a VERY long time.

And of course... I'll cut this off here... with this special moment. More to come, including how I can embarrass my kids from 600 miles away!

I know, its already been a long day.. but there is so much more to come!

The rain seemed to be sticking around, so there were a few last minute scheduling changes.. our cocktail party would be moved inside, Osbourne lights looked to be a no-go, and Fantasmic, well, that didn't look too promising either...

But, no worries! We were all so excited to meet each other (in person) that the locations just didn't matter! I quickly dressed and headed down to meet all the new Moms & Dads - as well as Laura, Tina, and a few of the 09 moms that would be with us this weekend!

Once we were done with cocktails, we headed off to Hollywood Studios for a quick spin on Toy Story Mania (146,000 for a score...still can't break 150,000 and I've ridden probably more than 35+ times!!!)!

AND another group photo - yes we held up traffic. Yes we probably shouldn't have.. .but hey, we needed a picture in the Mickey ponchos!!

Once our group ride, and photo op, was over.. we headed backstage to the Prop Shop for a yummy dinner! The food was excellent (a theme that would continue all during the trip) -- BUT none of us wanted to eat, we wanted to chat and take in the surroundings... I mean, after all, we may never get to see this room EVER again!!

When we entered the Prop Shop, our first sight was Jack - and since he's a favorite, I had to get a picture ... or twelve...

(Side note, this is a very special picture to me - all of us here are/were "rejects" - All of us had previously interviewed in Round 3 of the Moms Panel selection - but didn't make it in previous years... Here we are together FINALLY... a Dream Come True!!)

So, once we were reminded there was food, and yes, we had stop looking around and just EAT, we acutally settled down at tables. And, looking over the food selections - I was amazed. As a vegetarian (no meat or fish) I'm used to having less choices, not so good selections, and occasionally even being yelled at for ordering a Taco Salad with no meat (not at Disney of course!)... BUT there were so many selections for me... YUMMM! It turns out Laura is also a vegetarian, although with fish, and Special Event planning had kept us in mind with the menu! Of course, the excellent desserts were much appreciated too... the Truffles were my favorite!

By now, it was getting pretty late, and we realized that Fantasmic! was a no-go due to rain. So, we headed back to the Contemporary. Some of us stopped by the Wave to wish Disney Mom Cathy a Happy Birthday!! (Shout out to her here!!)

Even though it was a long day, Kaylene, Maria and I decided we weren't quite ready for bed. And since the Grand Floridian was just a short monorail ride away -- we would go check out the ginormous Gingerbread house!

A quick stop up to the room.... WHAT!! WAIT!!! STOP THE TRAIN!!! As I went rushing into my room I noticed a gift had been left for me!

Laura, Leanne, & Tina had sent us a beautiful present --- The Mickey shaped basket contained a jacket (you'll see it soon), a pen, baseball hat, watch, polo shirt, a messenger bag (LOVE IT), mouse pad and notepads -- all with the Mom's panel logo! There was also a shopping bag & rose! Wow, even more magic on this incredible day! WOW!

After a quick peek (I didn't unwrap it yet, since I wanted to document it with a ton of photos!!)... it was off to the Grand Flordian... The gingerbread house was as beautiful as always! I had to spend a few minutes spotting the Hidden Mickeys... but I was starting to fade fast... and since we had to be up early, we called it an early night...

Day 1 - Tiredness, Nervousness... and Happiness

So, where'd I leave off? Oh yea - Friday was the DAY, D (as in departure) Day... Most of us had very early morning flights. I had a 6:30 am flight, which meant I was up by 4am. No complaints though, since Kaylene (5fromabove) had to be out of the house by 3 or 4 am and up by 2am!

After one last check of the carry-on luggage (just the essentials: flat iron, makeup, paperwork and the dreaded, stressed-over cocktail party outfit, in case the real luggage went MIA en route to MCO), and we were off by 5am. The kids opted to get up early and come with us so they could have the chance to say goodbye at the airport ... I thought for sure I'd get some grumpiness from my 9yr old... but maybe he was just too sleepy for the realization that I was really heading to Disney World WITHOUT him! Keep those words in mind though: airport, tiredness, grumpiness... we'll be seeing those again later!

Luckily, after a quick deicing and a small delay, I was off to Orlando. I couldn't wait to land, to finally get off the plane - you see, I was meeting Kaylene right there at the gate. Kaylene and I had a bond forged in tears ... you see both of had been Rejects. Yup, rejects from the Moms Panel... Both of us had interviewed for the panel in previous years (and, I for one, totally blew the interview, talk about nerves... doh!!) and had gotten a dreaded "We're sorry" call.... This year was different though, after all the weeks of stress, of hopes, and of dreams - we both heard the magic words from Laura and Tina:
"We'd like to welcome you to the Disney World Moms Panel"! YESSSS! We made it! Together!!

So, as I got off the plane, I looked around quickly and recognized her! And Jodi from 2009 sporting her bright pink Moms Panel jacket (OK, I was jealous! I want one!!) ! Of course, we had a quick hug and started chatting right off... and for what would NOT be a trend - I didn't even shed a tear !!!

Time for luggage, and the Magical Express.... as we chatted and walked, chatted and walked, chatted and walked - I spotted another bright spot of pink ahead of us... we had managed to find Moms Panelist Jennifer! YEAY! So, off the 4 of us went.. baggage claim... yuck. Lets leave it at that - luggage showed up, so no real complaints :)

While we were waiting, Allison and Amy appeared! Now of course, we are having our own little party, right there in the baggage claim of MCO! Then, off to ME and Whitney and Jackie AND Karen are all there! What a great way to pass the time waiting for our bus to ... the Contemporary!

As we waited, we started hearing reports that Joel had arrived at MCO and that Amanda A, Suzannah, and Amanda W were all at the contemporary already! I couldn't wait to get going so I could meet them all!

Once we got to the Contemporary, I couldn't wait to check in -- because, the coveted Agenda... which had been kept a secret from us so far... would be revealed in my packet! OF course I had to rip it right open... I was speechless at my official id badge for the weekend

My thoughts ran something like this: "Seriously, this isn't a dream?? I'm really here? Can I stop pinching myself yet??" Of course, that ended up being a theme for the next few days :)

As I was standing there devouring the agenda, and star-gazing at the badge, I spied Joel! Yes, another panelist! Unfortunately, the ME had taken a while to get there, so some of the other Moms were heading off to lunch at Kona... and I'd have to wait until later tonight to meet them... I was pretty bummed, since Amanda A was among them and I was dying to meet her! We had connected early on, after interviews... so I was anxious to finally get to say "Hi" in person!

BUT, my room was ready so up I went to quickly unpack and check things out. The gray rain that had moved into Orlando was sticking around.. and would .. for the next couple of days...

Having been up since 4am, with only a snack of the airline's biscotti and coffee to sustain me, I decided to check out the quick-service restaurant... And, of course, who else would I run into ?? All the 2009 Mom panelists from the airport! So, I had some nice chats with them before they headed off to the Studios, Sci-fi, and the Osbourne lights! They were so nice and welcoming to a new face, it was great to have some company!

Of course, right after I finished eating, I somehow managed to bump into another group of Moms... So, I ended back up in the restaurant - this time with Marc, Terry, Brenna, Amy, Amanda W, Joel, Allison & Jonas! At the next door table were Diane G and Amanda P! Wow, what a great group they all are! I can't believe how quickly we all started chatting - like long lost friends separated for years!

All too soon, however, lunch was over... and it was time to go get ready for our Welcome Cocktail Party! So, I'll leave you here... since this is so long already... and pick up with our new plans... New plans, since the rain was going to drown us out that night....

I know, I know... I need to write something! I can't believe its been two weeks since my last... blog post. But what an incredible two weeks!

I hope I can be a little better about it now - although you know how the holidays go! So, while my intentions may be good, reality may not cooperate so much...

My incredible, magical, once in a lifetime Moms Panel training trip is over now. I can't believe how quickly the weeks passed between getting that call from Disney and flying off to jump right into being a panelist. Its seemed like days were dragging, that time couldn't pass quickly enough until the calls would be made... Then, BAM! A whirlwind hit.

Before I jump into that - let me just describe a little bit of those few weeks that lead up to getting on the plane. The time passed so fast - and so incredibly slow - all at the same time. I don't know how to explain that one, but if you've ever waited so long for something (2 long years in my case !!) that is so important to you, you'll know what I mean - excitement to get started, reluctance to get started - after all, I knew that once it started, the time would fly by and I'd be saying goodbye to my new friends...

While the 10er panelists waited to hear about travel, logistics and what to wear (cocktail attire at Disney ?!?!?), we also chatted it up pretty regularly. We seem to be a pretty well connected group with email, Facebook, twitter, and txting... in fact, I think if you take a peek at any of the pictures from the weekend... you'll see folks tweeting all the time! Maybe, if you look closely, you might even see one of us teaching Mickey and Minnie to tweet! (yes, a teaser.... I have to get you to read this somehow!)

Since we were so well connected to each other, some of us planned to meet right in the MCO terminal... so that's where I'll start off.... next time...

A Virtual Turkey Day...

If they only knew then... What Turkey day would bring... Not only is it Turkey & Dressing and Travel to be with family... but it now means Facebook and Twitter too!

Yes, I'm thankful for two more ways to stay connected in this hectic world of ours. An online way to stay connected to friends that have moved away and those we've only recently connected with (and maybe haven't even met in person, yet!).

People that we are thankful to have in our lives, but just can't be with on a special day...For those in our lives where distance is an obstacle, to you, I raise my virtual fork, to share the spirit of the Day of the Turkey - not only will I be there in my thoughts, but also on my computer ...

My excitement is building for a great day of family, friends and feasting. But, really, its more than just a day, Thanksgiving kicks off the official holiday season - a season of Thankfulness, family memories - new and old, festive decorations, good will and (of course) Santa!

Its a time to smile a little more, a time for small, unexpected surprises for friends and family, and a time to spread some holiday cheer...

I wish all you a Happy Thanksgiving, and Safe Journeys today and throughout the Holidays!

Seriously. Today could have been Thanksgiving. The turkey could be roasting right now. Mashed potatoes... and No Work! Yup, that could be today if this idea had been embraced...

Who couldn't use a Monday off.. I know I could. BUT, I guess, I don't really want to trade days. I mean, "Black Tuesday" just doesn't have the same ring to it. That mass of holiday weekend shopping just wouldn't be the same if it was on a Tuesday...

Black Friday. Two wonderful words... every year there seems to be a great reason to brave the darkness and head out before the family awakens. Reading sale papers while eating holiday leftovers is a tradition... looking for a deal, drooling over things we might wishing for, polishing off the maple pecan pie... Last year, it was a lighted Christmas tree deal at Home Depot that had me in line at 4:30am. That was the perfect surprise for my parents as they celebrated their first Christmas in a new home...

Although, to be honest, I may just sleep in this Black Friday. I can't think of anything that will lure me out this year. Thanks to Amazon, most of our shopping is already done. And, a thanks to Heather, our Christmas cards are designed & ordered - for just $3 this year (you can get yours free, check her blog out!). Its just too easy to order online and have it appear on my doorstep. No crowds, no traffic... and hey, I can shop in my pj's. It really doesn't get better than that!

Besides, I've already gotten the best gift I could have wished for: a healthy family and wonderful friends. And, this year, I'm also thankful for becoming part of the 2010 Disney Moms Panel. I'll be starting my Moms Panel journey in only 10 days. Maybe this Black Friday will find me packing for my Dream trip.....after some Pumpkin cake and coffee for breakfast of course !

Ever have one of those days, you know, you can't remember you name... you forget your coffee on the counter before heading out to work... maybe you can't even remember which day you were born on...

It could be that its one of THOSE weeks, you know, big project at work, two sports practice schedules to keep straight, company coming, a holiday or two around the corner, barely time to cook and fold laundry before collapsing, only to rise and shine and do it all over again the next day...

Thanksgiving is right around the corner. A yummy holiday if there ever was one! But, that means a few extra shopping trips, some extra cleaning, family you haven't seen in well, just way too long!

So, you forget a few things... hopefully nothing too important.. but if you've been a bit stressed and forgetful, its OK. You've got company - REALLY great company. I mean, if someone as famous as Mickey himself has had his birthday celebrated on the wrong day year after year... well, the rest of us shouldn't worry quite so much, right?

But, it really doesn't matter which day it is, does it? Any day can be a "Very Merry Un-Birthday!" -- a great day to give a hug, to remember to tell someone you love them, or to just have a few quiet moments with your child.

No need to wait for the "official" day - in fact some of the greatest gifts I've gotten this year haven't been on my actual birthday: a husband who is now a running partner as well as my best friend; a daughter who became my yoga buddy; a son who has grown to love Mickey as much as I do; a great new friendship with an instructor at the local gym; and the friendship of a couple of "rejects" who will be sharing an amazing Dream with me this next year... All gifts of 2009, none on my birthday.. but still, the best presents I could ever ask for!

And Mickey, I'll be seeing you real-l-l-l soon! Lets celebrate some more then! I may be a little late, a few weeks past your birthday.. but hopefully you'll forgive me!

Nope, still sky high!

Its been a week. Yup - A full week since I got the phone call. The special call, that turned dreams into reality... I can't believe the time has flown by so quickly!

A week ago, seeing that special phone number on caller id, I was afraid to answer the phone, I was afraid not to... Would it be good news this time? Would I be a member of the 2010 Disney Mom's Panel? Or would it be a sad call?

Thankfully, the only tears I cried were tears of joy. Yes, I cried. On the phone call. After the phone call. Then, when the tears finally dried up, I had a smile that lasted for days!

And... my feet still haven't touched the ground...

Details of our training trip are starting to emerge. Our group of 2010 Moms (and Dads!), along with some of the current panelists, will be staying at the Contemporary Resort. Yes, you know it, the fabulous piece of architecture with the Monorail running right through the building...

I'll be flying off December 4th.. so of course that means Holiday decorations! Christmas at Disney World is indescribable. Sure, there are lights, wreaths, ornaments, hot cocoa and cookies. But, as always, its the extra touches that just bring the Magic to life... take for example, a Christmas Tree in the Contemporary... what else could it be but a Magical Monorail Tree??

That's about all the details I know right now... more will be coming soon...

But before I sign off for the day, just one last thing I need to mention - the amazing 2010 panelists! Online, I've met nearly all the Moms and Dads for 2010 (and from 2008 & 2009). Every single one of them have been friendly, amazing, and supportive. Its a bit hard to believe that I am now one of them... but I am. And, because of that, I'm still flying high!!

So, my non-Disney Geek friends and relatives... you've been asking:

"Just what is this Disney Moms Panel thing anyways??!?"

Well, let me try to explain...

In today's world, with so little time to spend dedicated to being a family, those two weeks of vacation time per year are priceless - you really want to seize the opportunity to make it the best it can be! Not only that, but any vacation is a big investment of time and money (at least it is in our house)!

So, what do you do? You've decided you want to go to Disney World to experience a little of that special Magic. Well, if you're like me, you start to plan. Where to stay? Where to eat? How do we get from the airport to the hotel?? The list goes on ... and on...

Guide books are great. They give you a wonderful overview of what rides are in each park, what resorts are available to you. In fact, they've been around since just a few years after Disney World opened...

Disney World guidebooks still exist today. In fact, if you do a search on Amazon, you'll be able to choose from 27 different 2010 books. But, as great as those books are, sometimes they just aren't personalized enough. Maybe they don't answer the questions you have...

Maybe you need to know how to get around - I mean, the sheer size of WDW can be daunting! Its bigger than Manhattan, nearly 47 acres, 20+ hotel choices, and I'm not even going to attempt to count all the places to eat!

Speaking of eating, maybe you are a vegetarian, and need to know where to grab a snack or light meal in the Magic Kingdom - sure, you could scour the books, hoping to find out where to go or what to look for ... But, in this online world of ours.. there is an easier way. Yup, you guessed it! Thats where the Disney World Moms Panel comes in.

At www.disneyworldmoms.com you can submit your question and an amazing group of Moms & Dads will answer it. Specific advice given to you and your situation. They've been there. They've done it.

AND they are free to give you their best advice - honest advice. You see, the answers aren't required to give you a company line or to push you to spend more money. In fact, the Moms & Dads aren't employed by Disney. They are volunteers of sorts... sure they may get a reward for helping out... maybe a Trip to WDW or something similar.. but that's it. So, if they don't think that a resort or restaurant fits your family - they'll tell you. Yup. Seriously.

So, next year that will be me! That's what I'll be doing... I'll be helping real folks, with real questions... giving real answers... Sort of a personal guide to the place I love so much...
