Butter Pecan Cookies

Butter Pecan Cookies

OH. Yum. Yum. And more yum.

Preheat oven to 350.

  • 1.5 cups chopped pecans
  • 2 sticks butter, softened
  • 2/3 cup sugar (plus some for rolling)
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 2 cups flour
Toast pecans until fragrant (about 5 minutes).

Beat butter and sugar until light and fluffy. Beat in vanilla, salt and flour. Stir in nuts.

Roll dough into balls, then roll each cookie in extra sugar.  Place on cookie sheet. Flatten each cookie with the bottom of a glass (dip it in sugar if it sticks). Sprinkle a little more sugar on top. 

Bake until golden brown. About 15 minutes.
